I had not thought of adding xanthan gum. I'll have to give that a try. My usual go-to is adding chia seeds or flax meal. Thanks for the recipe!

The xanthan gum is a wonderful idea! We use it to replace gluten in non-wheat baking, but I never thought of using it this way!

I have never seen anything called Apple Juice Concentrate. Is it the same as apple juice made from concentrate? 🙏

I would expect it’s the frozen concentrate from which you would make apple juice.
