Greek Tahini Cookies (Vegan)

    Ingredients
    The Wet Ingredients:
    1 cup (220g) granulated sugar
    1 cup (250 ml) light olive oil or vegetable oil
    1 cup (250 ml) orange juice
    2 teaspoons pure vanilla extract
    1/2 cup tahini
    The Dry Ingredients:
    3 and 1/2 cups (500g) all-purpose flour
    1/4 teaspoon salt
    zest of 2 oranges
    2 teaspoons ground cinnamon
    2 teaspoons (8g) baking powder
    1/2 teaspoon baking soda
    Topping: 1/2 cup sesame seeds
    Notes
    Preheat the oven to 350 °F, 180 °C
    Line 2-3 baking trays with parchment paper.
    Make the Cookie Dough:
    Combine all of the dry ingredients in a bowl and whisk them together.
    Combine all of the wet ingredients in a large bowl and whisk them together. Add the dry ingredients in 2-3 batches and whisk together. Switch to a spatula and mix until a sticky dough is formed. Cover loosely with a towel and set aside to rest for 20 minutes.
    Make the Cookies:
    Take about a tablespoon of dough and roll it into a ball. Roll the ball into a 5-inch (12-13 cm) long rope. Roll the rope in the sesame and then place on the prepared baking pan. Shape it into an S or into a circle.
    Alternatively, skip the sesame roll part and form the cookies on the baking tray. Sprinkle the tops with sesame seeds for a lighter sesame flavor. (see video)
    Bake the cookies for 20-25 minutes.
    For crispier cookies, bake them a bit longer and cool the cookies on a cooling rack.
    For softer cookies, bake them for between 2025 minutes and allow them to cool on the baking trays.
    Transfer the cookies to cookie jars or to an airtight container and store at room temperature up to 2 weeks.
    Serve with Greek coffee. Kali Orexi!

    Hi I just tried these cookies and I have to say I am blown off. I was going to make them like you show in the video but I did not have oranges but tangerines. I substituted the orange juice and zest with that of tangerines. The taste is almost like marzipan. I have to admit I am still waiting for the dough to set but it smelled so good I had to sample some raw. Okay! This is a definite keeper. I think the cinnamon and the tangerine together are a match made in heaven. LOL.
    I will be baking them as soon as waiting time is over. I do not think they will last long :)

    Hi. I made these yesterday afternoon after I watched your video. They are very tasty! I baked them for 20 minutes and they were very crispy. I think next time I will not roll them in sesame seeds because they’re a little messy when you eat them. :-) And indeed they are fragile. But I will make them again because they are so good.

    I thank you for this wonderful recipe and the most beautiful thing is that it is for vegetarian fasting. I need to learn many vegetarian recipes because my wife passed away and I do not know how to cook, but I started because of my children. I thank you and I will learn many foods from you.

    Hi Demetra..Love your videos…!
    Would I be able to substitute the plain flour
    for wholewheat flour or even better oat flour,
    and the sugar xylitol or stevia..?
    I’m pre diabetic and have to watch what I eat..

    Hi, i just found your channel and almost immediately subbed. Great looking content, congrats. I'm from Portugal, and as you might know we also love olive oil. Definetely going to give this one a try. I was just wondering if the tahini can be replaced for almond butter ot peanut, it would just affect the taste, right? Good luck for your channel.

      Sure, if you're not keeping it vegan, milk will work. So will almond milk, or water with about 3-4 tablespoons of lemon juice. Let me know how they turn out.

    This dough is so greasy!!!i follow the recipe as is !!!!its a lot of oil in it so I added a lot of flour hope this will help!!!
