    🍀🍞 THE RECIPE:
    1 and 3/4 cups (420ml) whole milk buttermilk
    1 egg
    4 to 4 ¼ cups all-purpose flour
    3 tablespoons white sugar
    1 teaspoon baking soda
    1 teaspoon salt
    1 stick unsalted butter, divided
    6 tablespoons, cold and cubed
    2 tablespoons, melted
    1 cup raisins (I like ½ cup regular and ½ cup golden raisins)
    🍀🍞 LET’S DO THIS
    1. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
    2. Whisk the buttermilk and egg together. Set aside.
    3. In a large bowl, whisk together the flour, white sugar, baking soda, and salt. Cut in the cold, cubed butter using a pastry cutter, or use two knives, until the butter is pea-sized. Stir in the raisins and golden raisins.
    4. Make a well in your dry ingredients, then pour in the buttermilk/egg mixture. Gently fold the dough together; it will be soft, slightly sticky, and shaggy (shaggy = not overworked). To ensure it’s not overworked, work the dough until it barely comes together and the flour is just moistened.
    5. Add 1 tablespoon of flour at a time if the dough is too wet.
    6. Take your reserved 2 tablespoons of melted butter and, with a pastry brush or two fingers, brush it lightly over the loaf.
    7. With a very sharp knife, score a deep “X” in the middle of the dough (about ½ inch deep); this ensures the middle cooks evenly.
    8. Bake until the bread is golden brown and center appears to be done, about 40-45 minutes (or until a thermometer inserted in the center of the loaf reads 180 degrees).
    9. Cool for 10-15 minutes before cutting a thick slice and serving your bread with Irish butter. Slainte!

    This is a great recipe but….st Patrick’s day comes around when the bins and larders are almost empty. There is very little left of anything and everything. The end of winter is coming and spring is around the corner. So soda bread is made with about four ingredients and any bits of dried fruits or nuts. This soda bread would be from the richest family around. You would not but an egg in.
