You can walk on trusses. You can also store items on trusses. Usually you'll lay down plywood across them when you want to store stuff but often you don't have much attic space anyway.
Truss uplift is a big disadvantage and I see tons of uplift causing drywall issues in North Texas. If you go truss, you have to allow for movement. Truss promoters never talk about this.
Not true that trusses give you less space. Scissor trusses, parallel chord gable trusses, etc, give you cathedral ceilings without heavy timbers and if you want attic space, attic trusses.
Typically the cost to deliver includes a crane to lift them up, at least near me. You do typically only get a set amount of time before you're charged extra though.
