Hi Emmy if you want crispy fried pie dough you sub vinegar for part of the water in the pie dough, most people go 50/50 - just plain white vinegar - and for the flour, take 2 tablespoons of the flour out and add in 2 tablespoon of cornstarch - you will have wonderful crispy dough with the bubbles in it.
I've watched the other tutorial done by a Filipina. She said that instead of egg-wash, warm one table spoon of cornstarch and water to make that super crunchiness on the pie dough. If you want a great flakey crust, use real lard instead of Crisco. And make it half lard, half butter...you will get a crunch like never before! I've never had Jollibee, but I have a soft spot for the old McDonalds' apple pies. I will have to try this recipe!
Max it varies, but everything from apple pie filling to cheesecake filling. Depends on what fruit I have at home. The wontons aren't too sweet, which I like.

Aw loved this. Never tried Jollibee hearing of them only recently. But my grandmother would make homemade fried pies a couple times a week never glazing them and always using lard as we r from the south -she never cooked anything without lard or bacon drippings lol but no food has ever compared to hers. This video reminded me of that so for that alone I’m grateful and now am planning to make some with my daughter telling her a few stories along the way

Some changes you can try is to add a tablespoon or two of cornstarch to your pie dough. For the filling, nutmeg goes great with peaches. My mother used to make a great peach pie that uses it.
Mrs galang version suggested not egg glaze but TAPIOCA FLOUR melted in hot water for the crispy bubbly crust... i dont have the flour too tho so cant say if its closer to jollibee, but it was pretty crunchy and a bit bubbly (formed some cute bubble skin) when i made it
The original crust has sugar sprinkled on top of the egg wash before frying. It crystallizes in the hot oil and it contributes to the crispness. Just to let you know the next time you make it :)

Hey Emmy! I watched the video you linked on your description with the ladies speaking tagalog. You were right about the use of the egg whites on the inside of the crust. But what they believe to be the key ingredient to get the crispy bubbly texture on the outside is to use tapioca starch when rolling out the dough as well as heating up a mixture of water and tapioca powder with which to brush on the pie before frying. Love your videos Emmy. Big fan here from the Philippines ♥️
FILIPINO HERE!! You actually got it right. The reason why they brush the inside crust with egg whites, (literal translation) "so that the crust will not absorb the moisture of the jam and it also works to seal the sides of the crust."
My wife is Filipina and she said she uses the egg white inside because her mom did it. She called her mom and her mom said she used the egg white inside because her mother (grandma) used to do it. LOL Great Grandma is not with us anymore so that might remain a mystery...... As far as what to eat at Jollibee, their fried chicken is FABULOUS.....OH MY GOODNESS. We always get half regular half spicey. In the PI its called a 'Chicken Joy Bucket'. :) Love your content.
I've watch how Filipinos cook this pie some used water instead of milk and seal the crust using water some do not use eggs on the inside of the pie crust and just fry it as it is, this is the best made pie I've watch and this so far is well explained great video :)

JAMES PALGEN usually it is the other way round. Most people carry the virus and if your immune system is impaired, like when you have a cold, you get a breakout. 😊 you really just get sick from the first breakout/infection but most of us have this as kids.

I used to always make the Peach Mango filling (if there are almost over ripened Mangoes) and kept it in the fridge. It’s good on toast, crackers, even in oatmeals and cereals. Emmy, you're spot on with reason behind the egg white wash on the inside of the pie. In Mrs Galang's Kitchen video, she says that the reason behind the egg wash inside the pie is so that the pie crust doesnt absorb the juices of the filling and stays crunchy! :)
some recipes used a cornstarch slurry instead of eggwash to help with the crispiness of the crust. maybe that's why yours is missing the signature crunch?
Use egg roll wrappers when you make your Jollibee peach mango pie. The egg roll wrappers when deep fried will have a nice bubbly and crispy outside just like McDonald's apple pie.... Make sure you chill the peach mango pies after you make them as chilling the peach mango pies will help keep the egg roll wrappers from separating when the peach mango pies hit the hot oil.

Fried pies are popular here in the southern US. My mom made fried peach pies for us when I was a kid. She use biscuit dough for the crust. Some times she used home made dough and some times she would use canned biscuit. Man I loved those pies, and now I want some. I guess I'm going to the store for some peaches.
I watched the MrsGalangsKitchen video you linked to make sure that what you said about the egg white was right, and you were pretty spot on. It was so that the pie crust doesn't absorb the moisture from the filling, so it acts like some sort of seal (but nothing beats the power of Flex Seal!)

I made these all the time but you don't have the right dow I'm going to tell you the secret........ it's eggs rolls dow , I use the Wong wing brand. Roll it like egg roll , don't put anything on, no egg wash. Fry at 350 f till golden brown, just like you fry eggs rolls ! It's a pure beauty, just like the REAL one believe me !😊 And for the filling I make something similar, but if your going to freez them like me you must make the mix a little thicker 😊 YUMMY YUMMY 😉 PS When I make a big batch of eggs rolls I always make a huge batch of those mangos peach pies coz my family go crazy on those little babies and just like the eggs rolls, I deep freez them all , just not forget for those you are freezing do not fry all the way because like those you are eating right now. Fry them half way for those you are freezing. So when you want to eat some you fry these babies frozen. So good😚
I have these ingredients sitting around! Must make :D And my suggestion is this: on a Filipino channel I once saw kids being treated to Jollibee's sweet bean parfaits (I think I got that right). I'm assuming this was a dessert with adzuki beans, which I really like. I'd love to see what this tastes like and how to make it!
Try adding a couple tablespoons of Glutinous rice flour on the dough. Or after glazing the dough, try dipping it in fine breadcrumbs. That's what we do here in the Philippines sometimes.
Emmy, Try using white bread instead. Remove the sides of the bread then press the it using the rollers till flat. Add in the filling then close the sides using egg white and press with fork. Then dip in egg and some bread crumbs before frying.
My grandma taught me to make homemade fried pies. Apricot was our top fried pie but we also made apple ones, peach, or whatever fruit was in season and cheap or could be picked from the farm or orchard. We used a lot of canned or frozen fruit in the late fall, all winter, and early spring when fresh fruit is less cheap or available. Never had anything from the Jolibee place. PS. The protein in the egg whites form a barrier so the filling does not make the crust soggy. I want the pie crust to remain dry so for quiche and pies I brush the pie dough with egg white and then pre-bake the crust. Then I add the filling and make a shield out of aluminum foil to cover the exposed rim area to protect from burning. The crust will remain much crispier.

For Korean Fried Chicken they will fry the chicken twice to get that signature crunch. Maybe dropping the pie in the fryer it 2 stages would give it more of a crunch. Maybe Jollibee fries it once at the factory and then a final time at the restaurant.
You need to freeze the pies before frying. This will prevent the crust from soaking up oil. And also make them crispier as you’ll be able to fry them longer without over browning

Emmy here in Hawaii our McDonalds has 2 unique handpies aside from the usual apple pie. It's haupia pie and taro pie. Haupia pie is a cocnut custard filling. Taro is the local purple yam diced, cooked and stuffed into the pie. Both are yummy much like ur peach mango pie. I have 3 big containers of ripe hayden mango that came from my tree. Gonna try this recipe tonight!

Jollibee is crazy popular and their locations can get packed to the gills. I was in Singapore chatting with a woman and she suggested that I go to the Jollibee on Orchard Road and try the chicken and spaghetti combo. Sounded interesting, so I went. The line had more than 50 people so I ended up getting a couple of steam buns from 7-11 instead. There is a Jollibee near me and each time I pass by with dreams of picking up a meal, the place is always crowded. I gotta get there when they first open to beat the crowd...

Hey Emmy! I watched the video you linked on your description with the ladies speaking tagalog. You were right about the use of the egg whites on the inside of the crust. But what they believe to be the key ingredient to get the crispy bubbly texture on the outside is to use tapioca starch when rolling out the dough as well as heating up a mixture of water and tapioca powder with which to brush on the pie before frying. FILIPINO HERE!! You actually got it right. The reason why they brush the inside crust with egg whites, (literal translation) "so that the crust will not absorb the moisture of the jam and it also works to seal the sides of the crust."
My wife is Filipina and she said she uses the egg white inside because her mom did it. She called her mom and her mom said she used the egg white inside because her mother (grandma) used to do it. LOL Great Grandma is not with us anymore so that might remain a mystery...... As far as what to eat at Jollibee, their fried chicken is FABULOUS.....OH MY GOODNESS. We always get half regular half spicey. In the PI its called a 'Chicken Joy Bucket'. :) Love your content.
I've watch how Filipinos cook this pie some used water instead of milk and seal the crust using water some do not use eggs on the inside of the pie crust and just fry it as it is, this is the best made pie I've watch and this so far is well explained great video :)

Hi Emmy, so the two older ladies in the other videos said the egg white wash is used to prevent the moisture from the filling from seeping into the crust, to prevent sogginess. You also said the same thing as what she said about kneading the dough, to not knead it too much because it’ll make it tough to knead. Now I’m going to attempt this!
You were right about the egg white wash being in the center of the pie!! The lady in the video said that the purpose of the wash was to prevent the crust from becoming soggy from the moisture of the filling!!

I used to always make the Peach Mango filling (if there are almost over ripened Mangoes) and kept it in the fridge. It’s good on toast, crackers, even in oatmeals and cereals. An easy fix when you are craving the Jollibee pie. 😁

some recipes used a cornstarch slurry instead of eggwash to help with the crispiness of the crust. maybe that's why yours is missing the signature crunch?
Use egg roll wrappers when you make your Jollibee peach mango pie. The egg roll wrappers when deep fried will have a nice bubbly and crispy outside just like McDonald's apple pie.... Make sure you chill the peach mango pies after you make them as chilling the peach mango pies will help keep the egg roll wrappers from separating when the peach mango pies hit the hot oil.

Fried pies are popular here in the southern US. My mom made fried peach pies for us when I was a kid. She use biscuit dough for the crust. Some times she used home made dough and some times she would use canned biscuit. Man I loved those pies, and now I want some. I guess I'm going to the store for some peaches.
I watched the MrsGalangsKitchen video you linked to make sure that what you said about the egg white was right, and you were pretty spot on. It was so that the pie crust doesn't absorb the moisture from the filling, so it acts like some sort of seal (but nothing beats the power of Flex Seal!)

For the crunch use empanada dough/disks. You can get it at the store and it’s definitely going to get the crunch when you fry it.

I made these all the time but you don't have the right dow I'm going to tell you the secret........ it's eggs rolls dow , I use the Wong wing brand. Roll it like egg roll , don't put anything on, no egg wash. Fry at 350 f till golden brown, just like you fry eggs rolls ! It's a pure beauty, just like the REAL one believe me !😊 And for the filling I make something similar, but if your going to freez them like me you must make the mix a little thicker 😊 YUMMY YUMMY 😉 PS When I make a big batch of eggs rolls I always make a huge batch of those mangos peach pies coz my family go crazy on those little babies and just like the eggs rolls, I deep freez them all , just not forget for those you are freezing do not fry all the way because like those you are eating right now. Fry them half way for those you are freezing. So when you want to eat some you fry these babies frozen. So good😚
I have these ingredients sitting around! Must make :D And my suggestion is this: on a Filipino channel I once saw kids being treated to Jollibee's sweet bean parfaits (I think I got that right). I'm assuming this was a dessert with adzuki beans, which I really like. I'd love to see what this tastes like and how to make it!

There's an empanada dough recipe that I found which uses vinegar and soda water. It also has animal fat or lard.
Try adding a couple tablespoons of Glutinous rice flour on the dough. Or after glazing the dough, try dipping it in fine breadcrumbs. That's what we do here in the Philippines sometimes.

Try using white bread instead.
Remove the sides of the bread then press the it using the rollers till flat.
Add in the filling then close the sides using egg white and press with fork.
Then dip in egg and some bread crumbs before frying.
My grandma taught me to make homemade fried pies. Apricot was our top fried pie but we also made apple ones, peach, or whatever fruit was in season and cheap or could be picked from the farm or orchard. We used a lot of canned or frozen fruit in the late fall, all winter, and early spring when fresh fruit is less cheap or available.
Never had anything from the Jolibee place.

The protein in the egg whites form a barrier so the filling does not make the crust soggy. I want the pie crust to remain dry so for quiche and pies I brush the pie dough with egg white and then pre-bake the crust. Then I add the filling and make a shield out of aluminum foil to cover the exposed rim area to protect from burning. The crust will remain much crispier.

For Korean Fried Chicken they will fry the chicken twice to get that signature crunch. Maybe dropping the pie in the fryer it 2 stages would give it more of a crunch. Maybe Jollibee fries it once at the factory and then a final time at the restaurant.

In Australia we have tinned Peach slices in Mango purée its so yummy.
You need to freeze the pies before frying. This will prevent the crust from soaking up oil. And also make them crispier as you’ll be able to fry them longer without over browning

In addition to the delicious peach/mango pie, my Jollibee in VA used to have banana/langka (jackfruit) pie, which was pretty interesting as well!
Banana langka pie has existed since 1998 iirc. It's an on and off menu as it's not really a hit among the Filipino 🇵🇭 masses.
Emmy here in Hawaii our McDonalds has 2 unique handpies aside from the usual apple pie. It's haupia pie and taro pie. Haupia pie is a cocnut custard filling. Taro is the local purple yam diced, cooked and stuffed into the pie. Both are yummy much like ur peach mango pie. I have 3 big containers of ripe hayden mango that came from my tree. Gonna try this recipe tonight!

Jollibee is crazy popular and their locations can get packed to the gills. I was in Singapore chatting with a woman and she suggested that I go to the Jollibee on Orchard Road and try the chicken and spaghetti combo. Sounded interesting, so I went. The line had more than 50 people so I ended up getting a couple of steam buns from 7-11 instead.
There is a Jollibee near me and each time I pass by with dreams of picking up a meal, the place is always crowded. I gotta get there when they first open to beat the crowd...
