My late husband's brother is married to a Filipino woman named Nora. Nora showed us, years ago, how to make Lumpia. The prep is rather tedious, with having to finely dice everything (we used onions, carrots and potato, along with the ground meat and purchased Lumpia skins from our local Asian market) but the end result was definitely worth it. We would make a big plate of Lumpia rolls and just munch on them throughout the evening while watching scary movies :)

Those square spring roll wrappers looks more convenient than the regular circular ones we traditionally make lumpia with here in the Philippines. Cutting them into triangle made wrapping a lot easier and it looks more stable and neat. The problem I have with wrapping with the circular wrap is that sometimes, if not done right, the wrapper can open up when frying or handling.

The lumpia looks fantastic, and Jufran... well, it's amazing. I would much rather have it than actual tomato ketchup of any sort. my stepmother is from the Philippines, and I have taken some interest in Filipino cuisine. I was highly amused, after trying (and loving) Jufran, both normal and hot, to find out my stepmom has never even heard of the stuff! She sure as heck knows her pancit bihon, though -- hers is one of the big hits at every family get-together!

If your bottled sauce won’t come out, take a regular knife and put it in the opening of the bottle as you’re trying to pour it. The knife breaks the surface tension and the contents of the bottle will come out.

I've tried to use the standard spring roll wrapper vs the lumpia wrapper and there's a subtle difference. Lumpia wrapper gives it a much thicker and firm exterior, the standard spring roll wrapper is thin and surprisingly creamy from the inside.

Lumpia is smaller because it needs to cook well. Making it big will just burn the wrapper and it won't cook the filling well (which is a no-no for most Filipinos). The lumpia wrapper that you can find in most groceries are different from the traditional one. You can normally buy them freshly made (you can't freeze them because it will change the texture of it based on my experience, it will become crumble and starts to break apart and it's shelf life is just about 2-3 days if I'm not mistaken). The lumpia wrapper needs to be thin because you want it to be crunchy/crispy.

Lumpia with bean sprouts is also popular in the Philippines. Just replace the meat in your recipe with chopped tofu, cabbage and chicken, and ofcourse add lots of bean sprouts. Also the serving is usually bigger than the meat version, so you'd need a full sized wrapper rather than cutting the egg roll wrapper in half. This version is usually dipped in vinegar with some chili and chopped onions.

EMMY! a trick for getting ketchup out of glass bottles is to flick the neck of the bottle instead of applying force to the bottom. i think ketchup is a non nuetonian fluid, or at least shares some properties with them, bc when you apply force to the bottle of the bottle, it has the same effect of making the fluid seem thicker. theres actually a sticker on the neck of glass heins bottles that is a good guage of where to hit. it flows out much easier

I don't know why more people aren't losing their minds over it, or why filipino restaurants aren't all over the place and super popular for the stuff.
I mean, maybe if you've never had it, you're looking at it going, "It's just an egg roll."
But no, that is where you're wrong, my friend. Lumpia is life.
