I'm sorry, but why did you bother to blanch the potatoes before you started drying them? The usual reason is to make your dried thing last longer, but when you take them out of the dehydrator while they're still wet enough that most of them are sticking together, your flour's going to be *much* too wet to stay viable for very long at all.
Blanching prevents the potatoes from discolouring. No, the dried potatoes taken out from the dehydrator were not wet but thoroughly dried. You might want to consider watching the video again and read the subtitles attached.

Approximately 5 to 6kg of raw potatoes give 1kg of potato flour
You can get apx. 930gm potato flour from 6kg potatoes.
