    Can you please make a video of making products from this flour like Bread, Poori and other products because I tried and got a high oil absorption, sogginess issue, and bad background taste in making Poori or other fried items and for bread, no rising property was found in this flour.

    • @sipolash4171
      @sipolash4171 3 часа назад

      The issues you’ve encountered-high oil absorption, sogginess, unpleasant taste, and lack of rising properties-are likely due to the starch-heavy composition and lack of gluten or suitable binding properties. Here’s how you can improve
      1. After boiling and cooling the potatoes, rinse thoroughly to remove excess starch. Starch can contribute to the bad background taste.
      2. Potato flour alone lacks gluten, which is essential for bread rising and reducing oil absorption. Consider mixing your potato flour with gluten-containing flour (like wheat flour) or use gluten substitutes like xanthan gum for a gluten-free version.
      Suggested mix: 70% wheat flour, 30% potato flour for bread or fried items.
      Incorporate vital wheat gluten if gluten-free isn’t a priority. If it is, use xanthan gum or psyllium husk as a binder to improve structure and elasticity in your dough.

    I'm sorry, but why did you bother to blanch the potatoes before you started drying them? The usual reason is to make your dried thing last longer, but when you take them out of the dehydrator while they're still wet enough that most of them are sticking together, your flour's going to be *much* too wet to stay viable for very long at all.

    • @Globalfoodbook1
      @Globalfoodbook1  Год назад +1

      Blanching prevents the potatoes from discolouring. No, the dried potatoes taken out from the dehydrator were not wet but thoroughly dried. You might want to consider watching the video again and read the subtitles attached.

      You are welcome. Of course there is sweet potato flour but the method of processing it is different from that of Irish video. Here is the video ruclips.net/video/BaJg8lIp5zg/видео.htmlsi=i7owOLKGmwZ8V1Jv @@ozochinafaustinac.8779

    Do we have to boil it? I would like to do it with the skin, to give it the brownish color
