    Hi Bold Bakers! Thanks to you, my 1 Minute Mug Cakes video has been viewed more than 2 Million times! So by popular demand, I bring you 5 ALL-NEW Mug Cakes that I think you'll love. Try a Vegan & Gluten-Free Chocolate Brownie, Cookies & Cream & even Strawberry Cheesecake all made in the microwave. So let's get microwaving!

    ALL MUG CAKE RECIPES LISTED BELOW
    NOTE: My microwave is 1200 WATT. Since microwave powers are different, you may need to experiment. Happy micro-baking!
    CHOCOLATE BROWNIE MUG CAKE (gluten free, vegan)
    Makes 2 Cakes
    INGREDIENTS
    1/2 cup gluten free flour (oat flour,nut flour, spelt flour etc)
    1/2 cup sugar or raw sugar
    4 Tbsp cocoa (natural, unsweetened)
    1/2 cup coconut milk
    4 Tbsp Coconut oil (or any flavorless oil, canola or vegetable)
    Coconut ice cream to serve
    METHOD
    1. In a large mug or separate bowl, mix your dry ingredients: flour, sugar, cocoa, & salt
    2. Then add your wet ingredients, coconut milk and oil, to your dry
    3. Divide the batter between 2 microwave safe ceramic mugs.
    4. Microwave for 1 minute until the mixture is cooked through. It should still be moist when cooked through, not dry. Careful not to overcook or cake becomes rubbery
    5. Best eaten immediately. Serve with coconut ice cream.
    COOKIES AND CREAM MUG CAKE
    Makes 2 Cakes
    INGREDIENTS:
    For the cake:
    5 1/2 tbsp flour
    4 tbsp sugar
    1/8 tsp baking powder
    1 egg
    3 tbsp milk
    3 tbsp oil
    1 tsp
    Vanilla
    2 oreos
    METHOD
    1. Mix all dry ingredients together in an oversized mug. Then mix in the wet ingredients until smooth. After batter is smooth, add in the oreos and crush oreos.
    2. Divide the batter between 2 microwave safe ceramic mugs.
    3. Cook for approximately 1 minutes in microwave. Check on middle of cake. If not done, cook for about 20 more seconds. Careful not to overcook or cake becomes rubbery.
    DOUBLE LEMON & BLUEBERRY MUG CAKE
    INGREDIENTS
    3 tablespoons all-purpose flour
    1⁄4 teaspoon baking powder
    1⁄8 teaspoon salt
    1 large egg
    3 tablespoons granulated sugar
    2 tablespoons vegetable oil
    1 teaspoon finely grated lemon zest
    1-1⁄2 tablespoon freshly squeezed lemon juice
    ¼ Cup blueberries, frozen or fresh
    METHOD
    1. In the mug, combine flour,sugar, baking powder and salt. Using a fork, beat in egg, oil, lemon zest and lemon juice until very well blended.
    2. Microwave for 1 to 1-1/2 minutes or until risen and center is just set.
    3. Best eaten immediately. Serve with blueberry compote
    CARROT CAKE IN A MUG (egg free recipe)
    Makes 1
    INGREDIENTS
    6 Tbsp all purpose flour
    2 Tbsp maple syrup
    1/4 tsp baking powder
    1/8 tsp salt
    1/4 tsp cinnamon
    4 Tbsp milk
    2 Tbsp vegetable oil
    1/4 tsp vanilla
    3 Tbsp carrots, finely grated
    1 Tbsp raisins
    METHOD
    1. Mix all the dry ingredients together in a mug. Whisk in the wet ingredients until smooth. Microwave for 1 minutes. Cook longer if needed.
    2. Best eaten immediately. Serve with some cream cheese frosting.
    CHEESECAKE MUG CAKE
    INGREDIENTS
    4 ounces (115g) low fat cream cheese,at room temperature
    1 cup (8oz/ 225g)sour cream
    1/2 teaspoon vanilla
    4 tablespoons sugar
    2 egg white, slightly beaten
    1 teaspoon lemon juice
    1 tablespoon flour (prevents liquid from forming)
    1 tablespoon jam of choice.
    graham cracker crumbs
    METHOD
    1. In a bowl, beat the cream cheese until light and fluffy with an electric beater or hand whisk. Mix in the sour cream, vanilla, sugar, egg, lemon juice. Swirl in jam at this time.
    CAUTION: Microwave until you see it start to bubble in the center, and then stop cooking. This will take seonds, maybe 20 or more. Take it out and check it. Microwave for short intervals until you see the edge of the cheesecake firm but make sure the center is jiggly. If it is allowed to bubble and cook further, the mixture will "break" and you'll need to start over. Make a note of the successful cooking time for your microwave.
    2. Take out of the microwave and let cool to room temperature and then refrigerate until fully chilled, about 2 hours. If any liquid has formed, carefully pour out. Sprinkle with graham cracker mixture and top with any topping of your choice. Enjoy!

    Another thing, cook for 2 minutes and 10 seconds in a 900W microwave otherwise it's really under-cooked

    the lemon mugcake is DELICIOUS!!! i didnt have blueberries in hand so it was just a lemon mugcake. i also addrd an 1/8tsp of vanilla and the flavour is just PERFECTION. and i rarely eat lemon cake but this one was just amazing!! thank you gemma

      Gemma Stafford I just made the cookies n cream one and it came out ABSOLUTELY AMAZING!!! It was perfect because I was craving something sweet, and since I live alone, if I bake a cake I eat the cake, which is bad for my waistline !!! So this little treat hit the spot without being too much, and like you've said it other videos when you make it urself you know what you're eating, which is important too!     Gemma, since you've made so many mug cakes, could you include some single serving frosting recipes? I never have left over frosting at my house, and I would love to see a good recipe from you!

      yes! that's what I want too! I think very few people have frosting lying around in the kitchen.

      This is really late but you can make frosting with just powdered sugar and milk in a bowl and stir. Just add more sugar if you want it thicker, more milk if you want it thinner. You can use a tiny bit of vanilla or flavor extract if you would like!

    The carrot cake was delicious! What I would recomend if wanted, it's to add 1 1/2 tbsp of sugar to the mix and then it's 100% perfect. Amazing recipes!

    WOW GEMMA!! I just made the lemon blueberry one (minus the blueberries, didn't have any) and it was so good! Perfectly moist and airy, lemony... I put a dab of strawberry jam on top and it satisfied my lemon craving for sure. I can't wait to try your other mug recipes like the potato soup!

    I just made the blueberry lemon one but replaces the blue berrys with cranberrys and the lemon with orange zest and juice and it is amazing ☺️

      Michya Juvanie I haven't tried it but I think it would be 350oF for very little time, 6-8 minutes. Just keep a close eye on them .If you think it needs more time then keep going. Everyones microwave, oven and mugs are different so use your best judgment :)

    I made the carrot one and swapped the 4 tbs milk with 4 tbs applesauce and it came out very moist and it was filling too!
    Thanks for the recipe! I also added 1 tbs brown sugar because I wanted it sweeter :)

    Made these last night lemon blueberry & fudge brownie super delish! Love your channel and your new website. I googled your measuring spoons and the cheapest I found was between $45-$55 here in Australia. We always get ripped off here :(

      gulshen karaca OH NOOOOOOO, that is not right! so they are expensive as far as spoons go. They are around $15 US . Did you try amazon? $45 is absolutely ridiculous

    i love these recipes but i just wonder: if i make a whole tray of browniecake I use for eggs, all your recipes require one egg per cup, seems so much to me or is that just me?

    I just made the chocolate brownie MugCake and it turned out cakelike...I know why. I used GF Bisquick which has rising agents in it instead of a reg. GlutenFree flour. Anyhoos, I'm eating a chocolate cake for now and learning how to do this MugCake thing. It's good though.

    As I eat it it's not too good. It's cakelike but without the egg so the consistency is bad. Will buy gf flour and I'm certain the brownie will turn out great.

    Hi Gemma, I made the Oreo mug cake from this video. I cooked it for 1:30 but it wasn't quite cooked so I put it in for 20 secs and it came out rubbery. What can I do to stop this happening. My microwave is 800watts

      Hi Izzy. There are several factors that could cause that; over mixing the batter, the size or shape of the mug vs. cooking time, or just the time. I suggest that you check at 30-second intervals. That way, you can assess how long it would take to keep it moist and cooked.

      Leyla Layaali I haven't tried it but I think it would be 350oF for very little time, 6-8 minutes. Just keep a close eye on them .If you think it needs more time then keep going. Everyones microwave and mugs are different so use your best judgment :)

    I use apple sauce as a substitute for oil, it’s healthier and adds moisture, no need for egg either.

    I just made the lemon blueberry one and it's so good! It took like 4 minutes to cook though. Maybe that's because I kept stopping it then staring it again haha

    I made the chocolate mud cake and it is SO good! But I do think it’s a little too sweet, so you could probably cut down on how much sugar you use.

      Yes you can cut down a little sugar, but only as much as 20-25%. Sugar contributes not only sweetness but helps hold the cake together too. Feel free to experiment and give it another go

    OMG!
    DOUBLE LEMON & BLUEBERRY MUG CAKE is AMAZING!
    I've used strawberries instead of blueberries and is incredible. The fruit exploded inside of the cake and it's like a marmalade mixed to the dough... I totally love it! ♥♥

      mich mendoza Hi! Thanks so much for your lovely message. I've heard people use the Watt-converter website before. It's hard to say if it's accurate but you could give it a try. Just microwave for less time and check on it to make sure you don't overcook it. I hope you enjoy!

    Hi! At this moment, I'm eating the double lemon and blueberry mug cake and it is delish! I attempted mug cakes twice before from a different RUclipsr and it didn't turn out great. I'm impressed! I didn't have fresh blueberries so I used a GlutenFree, sugar free blueberry jam by Xyloburst. I cut down on my sugar intake so I used 2T xylitol and 1T white sugar. Xylitols sugar taste is spot on for regular sugar and when baking or cooking with it you'd use the same amount as reg. sugar. Anyhoos, I'm so glad this tastes good. I will definitely try your other desserts, thanks! BTW, I also used GlutenFree Bisquick instead of flour.

    Gemma Stafford Thankyou so much for these recipes. I made the cookies and cream one for my mother on Mother's Day. It turned out good and she loved it. Just one question though, when i baked it for 50 secs, the cake texture was good but it wasn't cooked till the very bottom. When i put it for 60 secs, it cooked all the way through but it was slightly rubbery. Any idea what I'm doing wrong? :)

      Anchita Potumanchi Thanks for your comment! Every microwave is different. If it's rubbery, you've cooked it for too long. Try 55 seconds, see if that works. Hope this helps :)

    GF Bisquick worked great, I had awesome moistness. Since I used blueberry jam yesterday it was a little too sweet, so today I used 1T less of sugar or xylitol and 1T of jam and that was perfect.
