@ I mean it's meat fried in bread crumbs. I'm surprised there's even a specific culinary term for it. Reminds me of the debate about the origin of french fries. It's potatoes chopped up and dropped in hot oil, the natives were probably doing it in South America 20000 years ago.
I truly enjoy listening to rip talk about his life/childhood. I find him to be an extremely interesting person, and I see a lot of my own father in him. I really hope there are many more Texas cafe videos soon!
When you go to rips house for food and find out he reuses the raw meat flour everytime, never washes his pan and sucks the nozzle of the olive oil 😂😂😂 love it, I just subscribed. Thanks rip

@@willyschwerin you can make it yourself by rubbing crispy old bread over a grater. We make it from old "Brötchen" which are very small breads, you usually cut in half and spread with cheese or sausage.
As I understand it, the origins of "chicken-friend steak" are in german immigrants adapting schnitzel to the most readily available meat in the midwest, which was beef. Pretty neat!
Old Texas, Kansas, Missouri, even Arkansas Cafes MUST serve coffee in white mugs that are slightly inverted curved in the middle-- go onto Amazon and search "greasy spoon mug" and you'll see what I'm talking about.
What's up Rip!! Vanco here. I always enjoy a great cooking show :) When this pandemic bullshit is over - I'm coming to WFAC to train, and I want to try chicken fried steak. I've never had it in my life. I'm looking forward to the experience.
This is turning out to be an amazing series. Please keep these coming. I will definitely be picking up a pork loin this weekend and making these. Thanks for the tips Rip!
Saw your video this afternoon and decided to make chicken fried steak for dinner. Cooked up some pork cutlets exactly as you described and added a country gravy, they were fantastic. Much easier and tastier than deep frying them, and a whole lot less mess. My 9 month old wolfed it down too. Thanks Rip
Papa Rip-thank you for the vid. I actually just made the cuban version-bistec empanizado- in a skillet. Good to know chicken fried can be made on a griddle. I will try this next
Thanks for sharing your family recipe. I will be making this very soon. Your presentation was so good that I might have to visit Wichita Falls for myself. Can’t wait to see the next recipe. 👍👍
Tnx coach Rip for revisiting this old classic! There are different variations of this food as Germans call it schnitzel and in Russia it's zhareniy karbonad. I made this food in Texas cafe way only i used small chicken breasts instead of pork/beef. It turned out very crunchy outside and tender inside. If i added some cayenne pepper/more spices it would be almost like KFC just 10 times better.
I've never used a meat tenderizer before and now seeing how much of an impact it actually can make I'm getting one asap. Thanks for making this. Your apron is remarkably stain free and doesn't look that old. How did you keep it looking so nice over the years or was this one that was from that time but not used?
So Ive always loved chicken fried steak but never bothered to learn how to make it. Now for the past two weeks Ive been making it regularly with some cheap pork loin. This recipe is fucking amazing and simple. Thanks rip.
Yep, this is almost the same pork schnitzel we eat in Czechia. The only difference is we usually use bread crumbs as a third layer of batter (first flour, then egg, then the breadcrumbs). For some this is an usual Sunday dinner. Served with boiled potatoes (or potatoe salad) as a side.
Next book idea : Starting Steak - Pink Man's Guide to Pink Steak

Who wants to see a whole season of cooking with RIP? Rip we need more of them cooking video's!
So beautiful to hear him talk about daddy’s cafe
😢
Rip is so pink I was worried he would start tenderizing his hand.
Is that high blood pressure?
After Rip started beating Faucis meat he confirmed that he's GAE

omg. x'D !!!!!
Did I just watch 36 minutes of Rip making a schnitzel?
36th minute is critical for the quality of the schnitzel!
Schnitzel fried steak
You know who else liked schnitzel, right?
I think traditional schnitzel is veal though, right?

Seriously, I feel like Rippetoe just schnitzed all over the Internet.
Rip trying to get his employees to try his food looked like a hostage situation
Most underrated comment!!! Made my day!
🤣
Silly snowflakes don’t know what they’re eating.
They didn‘t look too happy everybody having to use the same fork 😅
Best cooking show I’ve ever watched. Hands down.
Laugh out loud - need to spell all of that out.
Thank you for sharing your family history with us.
Listening to mark giggle while he beats that meat just warms my heart😂
I love these Texans. Takes them 36 minutes to do a 5 minute video. Miss that these days. What a wonderful storyteller!
I truly enjoy listening to rip talk about his life/childhood. I find him to be an extremely interesting person, and I see a lot of my own father in him. I really hope there are many more Texas cafe videos soon!
Ditto
I could listen to Rip explain how to do anything. Rip soothes me

@@BM-ru7ef 😂😂👍
This is great, looking forward to seeing this become a regular fixture
Don't forget to flip your steak every FAAAHVE minutes so it's fried evenly.
no, it's important to only turn ONCE as Rip said, and this is backed up by top chefs and experts in the meat industry.
🤣😂 whooooooosshhhh
And you can make a whole bunch of them in about FAAHVE minutes
I don’t think I’ve ever legitimately enjoyed a cooking show, but this was fantastic. Can’t wait for the next episode!
Finally a cooking show for men
Had to adjust my Hue by +20 to bring Rip's complexion out of stage 4 hypertension.
You won the internet for today 😂
This must become a regular feature of this channel. An absolute must.
I love Rip! He reminds of an ole football coach!
RIP is the shit!
If Rip cooks lobster does that count as cannibalism?
Only if the lobster's fat and has a twitchy claw.😻
Quite the comment from a chainsmoking alcoholic sociopath

I sincerely hope this is the start of a series. Best cooking video on RUclips right now.
Enjoyed it. In Germany we use "Paniermehl" for the "Schnitzel". It is made out of hard bread and used like the flour.
Yeah in the us they don't have much of that but they do have panko which I have found as the best substitute
@@willyschwerin you can make it yourself by rubbing crispy old bread over a grater. We make it from old "Brötchen" which are very small breads, you usually cut in half and spread with cheese or sausage.
@@Bronkonaut yeah the thing is there really isn't any good Brötchen in my area so it kind of a pain to find any thing to make a half decent breading
I was gunna ask, what's the difference between this and schnitzel

Love the show Rip... I grew up in small town Oklahoma and my Grandma ran a cafe for years. Love the atmosphere of old-time cafe.
Rip’s house exemplifies his great taste.
"...last time I use it (the pan) was last night (...) so it's fairly clean..." (while scrapping the leftover fat out)👌gotta love this man
Cool to hear rip remembering his dad
Great start to the series. Good to see Rip being himself. His daddy seems like a good guy too
Keep these coming Rip! Love this

Awesome video. I'll definitely be watching it four more times.
Also, the house looks great Rip. I love the stone work.

I made this with pork loin tonight and it was great. Did make a gravy with the drippings.

thank you- that was a delight. I had to watch it at 2X though which worked well
The menu he was talking about reminded me of my dad’s cooking. Okie roots not Texan though. Please do more content like this!
The cafe was in Wichita Falls and that town is more Okie than Texan. Probably why I like it so much.
