Here is a demo of the PedalPCB.com Organ Donor which is a clone of the Earthquaker Devices Organizer.

I used the Fender Strat into a fuzz into the Organizer into a VFE Yodeler for Reverb into the Trinity Amps Tweed Deluxe.
It was captured with a Royer 121 and a SM57 about 5 inches off of the grill into Seventh Circle Audio Preamps all into Reaper.

I'm curious... this just sounds like a 2 or 3 voice pitch-shifter... am I missing something?

Nope that is pretty much what it is, with the lag and choir controls you can dial in some faux organ sounds.
