Thanks for your videos! I have one question about the Gravity 560 model. Can you grill or sear with the lid open? Does the metal under the grates emit infrared heat so that the meat doesn’t cook with hot air?
I don't have any issues with this method of searing a steak at all...the end product, like ALL of your recipes and videos, looks perfect as usual! Love to know where you got that temp guage on the hood of your 1050. Thanks for another great video Tommy!

Guess I don't understand this versus over coals on a grill. Only thing would be if you don't have a charcoal grill. Your cooker, do as you please. I assume switches are bypassed?
Hiya' Tommy. A game-changer I discovered is to season your steak the day before cooking and leave it in the fridge on a rack uncovered. Turn it over the next morning. The seasonings osmosis into the steak and the outside gets a bit of aging while the inside gets more tender. I will never cook a steak again without this process first. Cheers.

Looks cool and I love my 1050. I just usually do this with my charcoal starter turned upside down. With a smaller grate over the top of it. Guess you can do the same here with just throwing a small grate over the opening.
That looks excellent! I don't know much about that mod Tommy, but I love that heavy sear! In our last house, I had a fire pit and would do steaks right over hardwood, and it was always awesome. A smoker will be my next toy for sure! Oh, and have worked next door to Peter Luger's, our steaks are better😉😎
I love the look of that sear..but very leary of a grease fire..I doubt that too many will have very good house keeping and after doing a few streaks the drippings will be all over inside that hopper. I'll pass..just use the griddle that came with the 800..
Wouldn't you be getting a lot of dirty smoke on the steak though because of the unlit charcoal that's resting on top of the burning flame? I would bet it leaves off a bit of a bitter taste but considering the amount of time maybe you can't tell...?? Idk, seems like an inferior way to cook a steak when you could just crank up the gravity series up to 700°F. Just a thought for people on the fence about it
The big issue with this mod for me is the risk of grease fires. The gravity grill is already at risk of that if you don't stay on top of cleaning, and fire blocks. You can get the same results with a $10 charcoal chimney, and not risk burning your studio down.
Looks good to me! It’s nice to know it only takes a quarter hopper to get the flames 🔥 that high. I overshoot more than I would like to admit, so easy done and definitely understood with all you have going on
Imma have to do this mod. I have bypassed my switches, and think that fat falling on fire makes EXCELLENT flavor. I want to do this mod and the bigger second shelf mod. I assume there are no coupon codes LOL. And I agree, I never order steak out anymore because I feel like I truly make a better steak myself!

Love the cook but for me I think I would rather not do that to the hopper. But it is a nice way to avoid any big grease fires with some control. Good as always

That is correct... Once those flames peer through the top thats all you need. PS... The fan is not running!
