I use 8.625*11.25 for all the pages, and select Bleed while uploading to KDP. If you select no bleed then it will be 8.5*11.0 inches

Yea the pages are one sided. I generally prefer 25 pages with 50 total pages. 25 to 30 single pages is good number.
