So if I have a trinity mount (like on Phusion 100) and the boot too narrow, I can get a bigger boot size and use same mount ?

Yes but must be trinity compatible

yes all trinity are compatible whatever the size.

Hi Dear. I have a PS Hardcore Evo, conventional frame, not Trinity, 4x76 mm. I have an additional frame with 3x125mm. I would like an intermediate wheel. Which one I should choose, 3x100 or 3x110? Thanks a lot.

i would go for 110mm , more choice and it's a great size for roll and comfort.
