My toffee recipe is older: no thermometer and no corn syrup. So mine is less well behaved. I don’t think I have time to score it before it sets though I haven’t tried. Maybe that’s a benefit of the corn syrup.
I found something online that I'm going to try to copy. About the only thing I like better than chocolate and cherry is chocolate, cherry, *and* coconut!
Where can I find a thermometer like the one you use? I have several candy thermometers and just not happy with them. Glass ones I can’t read very well. Digital ones..I just can’t get them to set in my pan the way I’d like. One clipped so tight onto my pan..it actually scratched it. Also I looked quickly throughout your videos and haven’t seen one on..how to find out my attitude. Really enjoy all your videos and thanks again on another great one here.

You could be right. I believe the syrup slows the crystallization process to keep the crystals small.
Would you be able to make Cadbury's Cherry Ripe candy bars?
