I made this today. Praying that my conversions good. It was hard to get good one from grams to cups. Made 6 small ones for gifts and one small loaf for Christmas Day dessert.

Hello Florency...thank you for this detailed recipe ... just a couple of queries ...1) I have never soaked the fruits in caramel ... what effect does this have on the final taste and texture of the cake? 2) I either soak the fruit in rum or orange juice (not in both) .... If soaking the fruit for 2 weeks prior to baking, won't the orange juice taste different ... like towards getting spoilt? .... When I have made the fruit cake for friends who did not touch alcohol, I used orange juice, but soaked the fruit the previous evening and baked the next morning.... Thanks once again ...God Bless!!!
Hello Irene, I had made this cake at Christmas time. I used caramel for the first time. The texture was fine and added a deeper colour to the cake. Orange juice will turn rancid within 24 hours, so I had kept the soaked fruit in the fridge. Remember to stir it regularly Hope this information is of help to you

This could help if you ever try this recipe again-The liquid can be poured over the cake later, so it's absorbed. You can turn the cake upside down and do that. Also, thanks for the new year wishes! I soak the fruits in orange or apple juice and keep the container in a warm place for a day or two and then in the refrigerator.

You can skip the rum, Fatima... the alcohol in the rum will actually evaporate when baked, leaving just it's aroma. Fresh orange juice works fine too.
