CANNED BANANA BREAD - BOXED LUNCH TREAT

  • Who enjoys making boxed lunches? Not me for sure but I do enjoy making treats in bulk so that there is always something to pull out of the pantry to add to the lunch box. If you have never tried canning Banana Bread you should give it a try.
    Set your oven to 350F
    For the Banana Bread you will need
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    1/2 teaspoon ground cinnamon
    Mix the dry ingredients together and in another bowl:
    1/2 cup softened butter
    3/4 cup lightly packed brown sugar
    2 large eggs
    1/3 cup sour cream
    1 tsp vanilla
    4 mashed ripe bananas
    Cream the butter and sugar together and then add the eggs one at a time. Add the sour cream, bananas and vanilla.
    Carefully mix the dry ingredients into the wet without over-mixing.
    Coat each jar with cooking spray and fill them half full of the mixed dough. Using vinegar on a kitchen towel or cloth carefully clean the tops of each jar to remove grease and any bits that may have gotten on the jars when you were filling them.
    Space the jars out on a rimmed cookie sheet and carefully place them into a preheated oven. Bake about 25 minutes or until a skewer or toothpick comes out clean. Remove from the oven and immediately screw the bands down being mindful that the jars are super hot. Listen for the pings!

    Good morning! I remember doing this when my older children were little! We adopted 5 after raising 5! I did carrot cake and chocolate cake as well! I need to do this again, they make nice breakfast treats also, afternoon snacks. I lost my husband to cancer in November, 2020, it has been hard, but I’m trying to continue on, some days are better than others. These would be a nice since I’m so busy. Thank you so much for sharing! ( I wonder if those who criticize, would do so to your face? When did it become alright to “tell” others what to do or not? They need to mind their own cart and let me push mine! Everyone’s cart has different contents) oh yes, stay warm!☀️

    I love what you do. My family’s been canning for years and we’ve had no problem doing what you do. Besides it’s for yourself so you have a right to do things your way. No one has to do it your way if they don’t want to. Maybe the people who complain need to do more and complain less. Thank you for what you do, I enjoy it and learn a lot from you.🥂

      There is a product named Steramine that will effectively sterilize/ disinfect your counter so that one will not worry about surface contamination. It is available in tablet form, add one blue tablet to one gallon of tap water, decant into a spray bottle and use as needed on any surface. Food service industry uses it for surfaces, inside drink dispensing machines, etc. It has been proven to kill 99.99% of surface bacteria and viruses. It keeps on killing after it dries.

      It rebel because we trust ourselves and will not bend to invest hundreds of dollars for all their expenses equipment. If you use glass baking pan to bake and cook in why not use glass jars as a cooking vice and just put a lid on it. It's the same process as a casserole dish with a lid.

    Your kitchen you're rules...we have been canning and baking in out indoor and outdoor kitchens long before the FDA even was thought of. We have baked in pans, buckets, on rocks, on wood and in cast iron. We have used the methods of our ancestors for generations and in my family it goes back to my great grandmother teaching and her great grandmother before her. It's the beauty of having the knowledge of many,many generations and years. ❤i say we have fed our self and families for years and can heal with good quality of food and clean way of preparing that food. Using our intelligence, eyes, nose and taste. Thank you for your vedios. I came across them in my internet feed and enjoy them very much.

    I really love this idea! Our baked goods always dry out before we can eat them all and my guy takes a lunch to work also so this would be very handy. I would love to see how you do the cinnamon rolls! Thank you for sharing this!

      Oh you'll like this then. The banana bread was nice and moist. I prefer my banana bread the next day and this come out of the jar just like that. She is wonderful isnt she.

    My mom used to make brown bread in an aluminum can when we were little..I enjoyed those good old days:) im not a real molasses fan..but mom my used to make it taste good..with melted butter on it..;)

    After 71 years myself, I've determined that we now live in a society now of narcissist's who have to give their opinion on everything! I love your videos, kinda feel like I'm in your kitchen with you with a cup of coffee and just exchanging recipes.     Hello Colleen🤗 Just came across this video when I thought I was done after making your Hamburger Soup🤗 I’m going to def do this also❣️ but.... my question is why all the fuss you were talking about? I’m not even sure why they call it “canning bread” when you don’t use the canner AT ALL😂 and I was waiting👀😂 It’s baked, done, and lids on! No diff than putting up leftovers in containers when it’s still sorta hot and the tops sink in🤷🏽‍♀️ If I knew this all it took I’d done this lonnnng ago (well last year, just started canning June last year 😏) Really enjoying your recipes so please don’t stop. Though I tweek a lil’ I love them just the same. (I can’t follow a straight recipe for nothing) Thanks again, enjoy your journey☀️🤗🤗

    I love how you line the back splash with clear plastic, it saves on cleanups. My mother-in-law was a great one using newspaper everywhere to save on cleanups when canning.

    Hello Collen, how are you? As always, I love your channel. I small silicone mat works wonders for keeping bowls and such in place. Be safe, Debora By the way, I have the use of 1 hand only. The mat also let me screw my lids on my jars without having to pick up the hot jars. Take care.

      For sure check out my most recent video on Cream Cheese Frosted Cinnamon Buns. I do a couple of canned cinnamon buns there. The only thing I haven't tried yet is to pour the frosting on before I seal them but I think that might bring the temperature down to much. All the best, Colleen

    My husband is a truck driver also and I just recently bought him a lunch box that heats the leftovers because he doesn't have any where to heat it just thought it might help I got mine on Amazon

    I really enjoy your videos, keep up the great work. My hubby and I are both in our mid 60's, I'm retired and he is still working. Making his lunch is okay it's trying to decide what to make as he's a picky eater.

      My husband is a long haul truck driver with a small cooler and heated lunch box so we usually freeze left over meals and that is what he takes but he usually knows what he wants and he is not picky at all.

      For sure check out my most recent video on Cream Cheese Frosted Cinnamon Buns. I do a couple of canned cinnamon buns there. The only thing I haven't tried yet is to pour the frosting on before I seal them but I think that might bring the temperature down to much. All the best, Colleen
