Thank you for vegetarian recipes for eggplant as well as cauliflower. Living in Hunan province the Chinese have SO MANY wonderful variations for these vegetables that are so often ignored in the West! Obtaining the recipes is a treat so as to be able to make them at home! Thank you!!!!!

All the other recipes calls for salt coating the eggplant and wait for the water to come out. This seems easier. Also the dry pan grilling the oil coated eggplant is a good idea for texturing the eggplant. My favorite veggie but hard to make it successfully so always looking for eggplant recipes to see if there's special tricks to make the meat tender besides frying it first.
This is brilliant Chef Lee! Thanks for a vegan/veg version. I absolutely love aubergines and I'm off to my local HK supermkt to see if they have the fermented cabbage. Also love the slow cooking method you're teaching us that infuses the simple flavors into a delicate veg like the aubergine. I'm so delighted I happened upon your channel chef. Cheers!

t fish flavor is from pickled chili with fish
now replaced t fish with yogurt

I have a clay pot but I didn't think you could use it on the stove top with direct heat...?
You can certainly cook on it with direct heat. If it's not good quality then it might crack though - Lee
