I just eyeballed everything, adding my spices more slowly......I was absolutely FLOORED at how the cinnamon and rosemary not only played on each other and transformed the flavors into a unity but with every other component perfectly harmonious.....oh my word. I was out of greek yogurt so i used sour cream. This was truly amazing

why isnt this on foodnetwork? i use to love that channel when i was a kid like 8 or 10 years ago. now its a bunch of fkn drama only people without a social life care about. really. this guy is straight to the point and hsi entire personality is represented by his voice to our ears. Working on your recipe right now. I had to modify it just a bit. I have lamb rib chops. I don't have any lemons but I have lime juice. I don't have regular yogurt, I have french vanilla. I don't have any chili peppers so I used Sriracha.
I do however have fresh rosemary growing on my porch.
I've made the marinade already and although I had to modify it, it tastes great.
Gotta love Sriracha in almost anything.
Now I'm taking a break while they marinate, I have no Belgium beer but I have some pretty good cabernet sauvignon.
If I remember I'll let you know how it turns out.

ok so when i saw it grilling i thought it looked nasty but then you brought it in and it was fantastic, i would reccomend turning the brightness down on your camera when you shoot outside. great video as usual :)

meat is meant to be cooked pink ( rare or medium rare) to keep the blood and juices in the meat so it is moist and so that it is not like a piece of cardboard when you chew it

Meat from the grocer sometimes has a slimy feel to it - especially pork. That is what got me started washing it.

How do you let meat rest without it getting cold? My mum is really fussy and the one time I let it rest she put it in the microwave to reheat it! I thought of using tin foil, but that seems wasteful and I wasn't sure if it would cause the meat to keep cooking as it rested.

I am wondering if lamb leg steaks would work instead, although of course any meat on the bone has more flavour. I would try it with pork spare rib chops to, would need more cooking but are tender a juicy, and better for you than beef.
