🥣 Traditional Russian Cold Soup Recipe "Okroshka" 😋 Weird and Bizarre but SO GOOD!

- Okroshka is an old Russian recipe of cold summer soup that is very light and is very good for you. Ingredients include but are not limited to: cucumber, radishes, green onion, dill, boiled eggs, 2.5 cups lowfat kefir, 2.5 cups sparkling mineral water and 1-2 tsp salt. You can also include either or all: shredded cooked chicken, ham, bologna, boiled potatoes, mustard, vinegar. Grate or chop everything, mix and chill. Thank you for watching ♥

My wife is from Russia, and she prepares traditional Russian dishes every day. Me and my family must have been Russians in a previous life as we all LOVE her cooking. I have never eaten more healthy food in my life, and so tasty!
Ohhh I used to eat this at my godfather's! He is russian, but unfortunately is living his last days because of Alzheimer. I will try your recipe in his honor. It's such a good soup. I love it.

I am not sure... he refuses to eat now... He is a strong man, he lived such an incredible life. He is 96. He went through world war II, and went through so much, you have no idea! My father once interviewed him for a radio program here in Canada. I couldn't believe what he went through. But sadly, now, he remembers nothing and is in a wheelchair...

This video inspired me and I made the soup tonight. I live in Texas and cold soup sounded perfect for this hot weather. It was DELICIOUS!! I followed her recipe and now have a new favorite food.
I believe that this soup was created out of necessity. Think about when and where too. The area was poor and needed to make something substantial to fill their bellies So they used what they had. ( or didn’t have like heat). Necessity is the mother of invention!!
Elle Groover, absolutely agree with you. I have noticed many traditional dishes are just a bunch of seasonal ingredients from local areas mixed together. 😊 Our grandma's are the real pioneers and chefs!
yes exactly right. every culture has this dilema and they use what is readily available. it’s something we all have in common.
Like ratatoullie and basically the majority of soups. My mother calls turnip soup "peasant" soup because it's just common found veg at the time like turnips, potatoes and salt.
this is excellent for the summer. It reduces the heat of the body and all the ingredients are refreshing and light and that's what is needed in hot summers, not heavy, oily etc. In other words, it reduces Pitta, the fire element. So try it in the hot summer days and enjoy it.

In Poland we have a very similar dish which is also served with potatoes and it's scrummy
Zofia Anna there is a Russian soup called holodniy borsht (cold borsht), and it is exactly what you describe it to be. Very similar ingredients to this--the egg, the cucumber, radish, and dill, as well as a pink broth due to the beets. And of course--a dollop of sour cream on top.

steeoked I get that, I guess it's just that I've seen in her past videos how she can get so emotionally down and lonely and she's so sensitive. I just wonder and hope she's ok during long stretches of silence. I know she posts ASMR vids more frequently but those are her work, and say nothing about how her heart is. Sometimes I even feel like when I watch her ASMR vids I can tell how she is because I see joy or sadness in her eyes. For example, in her metal elements video she seems sad, but in her We Shell Relax video she seems genuinely happy. Wow I am really over thinking this....dear brain, please shut up.

She might just b doing other things. But i also understand that you get worried bc this is basically all the connection we have with her and its natural to become worried when that connection is changed. This is so cool! Cold soup is rather foreign to me but seems like a great idea. I love that this recipe is vegetarian with the option of adding meat or not - a lot of soups rely on animal broth so I can’t eat them :( Always a pick me up to see a video from you - thank you! 💜💜

I always think of Russian people being very hardy and healthy, and this meal full of minerals, vitamins and probiotics probably explains why I think that. 💕🤗
I was diagnosed with Lyme Disease over 3 years ago and I couldn't eat anything.
Everything upset my stomach. I made this soup and vichyssoise so many times I actually got sick of eating those cold soups (it was Summer) but now I am craving it again in the winter.
I do believe it actually helped me and I drink kefir all the time.

I made this yesterday and it was AMAZING! I've been making my own kefir every day for years. I usually just drink it straight for the health benefits and, although I don't mind the taste, it isn't exactly a pleasure. This soup is DELICIOUS and provides veggies as well as probiotics and protein. I had never heard of this soup and would never have thought of combining these ingredients but it is SO GOOD! Thank you, Maria. You help me destress, sleep and now have provided my new favorite recipe and summer food staple. And all of this for FREE! I hope all of the positivity you put out into the world comes back to you and your family in droves!
I eat Kefir in my smoothies!! Not many people know about all of the nutrients in it! It is AWESOME for gut health! Love cold soups, I am going to make this.

My little sister came to the US from Tula when she was 8. She is now 21 and loves raw radishes, garlic, onions and dill. We laugh that she’s picky but she’ll always say it’s just the Russian in her! I’ll have to make her this soup to try! Thank you for sharing, Masha! 🍲

In Turkey we don't add egg. And we call it "cacık". Try to add some dry mint. You'll gonna love it.

Aslis Han we dont add redish and add freshly cut mint and tomatoes, and very little water almost dont dilute it much .
I've made this twice since I first watched your video and I really enjoy it! It turns out I like it more after letting it sit in the fridge for more than 12 hours, the mineral water goes a bit flat and the flavors incorporate better.

I love it when you cook Russian dishes, first of all because I love to learn new recipes, and cooking is one of my passions. Second of all, as an Eastern European (Romanian), I know we share a lot of similarities between foods. Our common love for borsch is something that other cultures don't seem to share that much, as it is an acquired taste. We make here "ciorba" which is like a sour soup due to the borsch. I have never tried Okroshka, but I definitely will.
We also like to eat a cold soup here, with red orach ( loboda- also found it translated as pig's weed; what an unfortunate name for such a great plant ) and we put scrambled eggs in it. I will assume that Okroshka is also a bit tangy due to the kefir.
As for weird and bizarre foods, we have the famous "ciorba de burta" or tripe soup in English, basically cow stomach soup, which we eat with garlic, vinegar and lots of sour cream.
HellCat omg we have soups made with ‘loboda’ as well in Bulgaria! And the ciorba de burta is ‘shkembe chorba’ here but it’s made of pig’s belly instead (gross!) :D

I'm Puerto Rican and in my culture the cuisine is VERY hearty with lots of tomato, garlic, onion, cilantro and pepper based foods but this light delicate soup, okroshka, sounds absolutely delicious to me for a nice hot weather dish! Saw this video when I woke up in the morning, on my way home I grabbed some stuff in the supermarket and just finished making it. I have food intolerances so I substituted kefir for coconut and soy yoghurt but it turned out great! I already ate some of it bcs i can't wait for it to chill a bit. :D I loooove cold soups, tourists are always shocked when they see we have cold fruit soups in my country, I donno what is so strange about that. So I really enjoyed this recipe, thanks a lot Maria! :)

We have a similar thing in Bulgaria called "tarator" but we use just yoghurt, water, cucumbers, garlic, dill and walnuts (optional). It's a life saver during the hot summer days. :-D
