This video closely follows Matsuya, a famous kappo restaurant in Izumisano, Osaka that has specialized in blue crab(Watarigani)cuisine for 55 years and attracts gourmet from all over Japan.
I filmed the whole process from how to handle the precious blue crab to how the traditional blue crab full course is prepared.
Nowadays, domestic blue crab has become very rare and expensive, but there was a custom in the Kishiwada and Izumisano areas of Osaka to eat blue king crab together during the Danjiri Festival.
In order to preserve this memorable taste and traditional blue crab dish for the next generation, the number of craftsmen has been reduced due to the Corona disaster, and now the owner and his family are running the restaurant and struggling to keep it running.

Nice to see a video where the Chef actually dispatches the animal before cutting it up. I stumbled onto some videos of shrimp and squid preparation in Japan and I couldn't decide if they were trying to eat the creature, of just make it suffer as much as it could before it's death. I wonder how long that knife can keep it's edge. Looks very sharp, but man what a beating it is taking.
Western cooking methods throw live lobsters into boiling pots of water.
Seafood tends to get brutal treatment overall worldwide. I think its because sea animals can't scream and don't have much visible blood.

(Wenn wir es noch genauer nehmen, so waren die Krabben genau dann tot als man mit dem Messer ihnen durch das "Gesicht" geschnitten hat.)

What the chef cooks is called 梭子蟹 in Eastern China, a kind of nomal food there.
But by good designing and careful procedure, it seems very much tasty and beautiful to look. GREAT JOB! BUT I still prefer the way of cooking a crab in Eastern China way, and
somehow quite similar to the Japanese style.
これ、中国華東地域でよく見られてる食材で、梭子蟹といいます。その雅コースは、良い組み合わせで、とても美味しそうです。 ちょっと中華式のカニ料理方の影も見えてますが、やっぱり中華式のほうがすきですね。
