Former chipotle employee here. Chipotle rice is super simple. They use a little oil and bay leaves in the water while cooking, when its done its mixed with celantro, a little salt, citris juice(Just use lime juice its better) and you're done. Its been a long time so anyone feel free to correct me, but its a super simple and tasty way to make rice.

Also the cheese: it's a blend of fresh shredded blocks of monterey jack and white cheddar. They do indeed shred every morning. As for the oil, it's a bit unique, they actually use sunflower oil in the rice, so that likely will contribute a bit of the flavor you experience that makes it so different from other rice.

I think the best option for this use case (trying to get a full week of lunch/dinner) is the 3 meat custom order. You get more than double the bases (can double your rice and still get beans), a third protein tray (double chicken + steak), choose 4 toppings (triple fajita veggies and 1 cheese), double up your guac, double your corn order (or go 2 corn like you did and 2 salsas) and you can double up your tortillas. Pricing in my area (Indianapolis) is $150 before taxes. So for like $20 more you are getting ALOT more food. You could for sure get 10 meals out of this, if not 12. If you are getting 12, I think there is good value there.

It could've made 10 bowls but you used 150g of meats per bowl rather than 113g, which is the 4oz portion they actually serve per bowl.
Here's the recipe for the cilantro lime rice:
    Cook the rice with bayleaves
Mixed cooked rice with cilantro and lime/lemon juice concentrate or fresh.
Don't remember measurements so just do it to taste. Honestly can't mess it up unless you over cook the rice or used too much juice.
Best way to eat and prep these types of things at home is to not make the multiple individual bowls. Put all the packaged ingridients in the fridge, pull out, weigh and make a fresh bowl every time, then mix. That way you won't have soggy lettuce. Also chipotle is supposed to be served cool items (salsas and such) on top of hot items (rice, beans, meat), that dynamic adds to the experience and flavor.

I meal prep my own Chipotle, but I don't make the rice because of having too many carbs, I instead would substitute the rice for a tortilla for a taco/burrito, other than that I just make more chicken while prepping for the protein, usually 3-4 packs of chicken thighs will cover a weeks worth of burrito bowls for me, the corn salsa, pico de gallo, and guac are all pretty simple to make using the same ingredients, you just gotta chop/cut up the vegetables themselves(cilantro, onion, tomatoes, jalepeno if you want) same with the fajitas, just chop/cut up the peppers and cook them with oil and some seasoning, beans are also easy, canned beans with seasoning/recipe you can find online, sour cream and cheese if you want can just be bought at the store, overall, meal prepping this takes usually an hour maybe 2, I would recommend getting an air fryer for the chicken just to speed up that cooking time(6 mins at 400F and flip for another 6 mins at 400F) for most air fryers will get that chicken perfectly cooked

I had a couple come in to the store when I was the assistant manager asking for a way to do this. We had no way of doing a catering for just ingredients, the closest would be the build your own, but you're limited to how much meat you can get.
They wanted something like 40lbs of meat, because I think they were planning to sell meal prep kits.
For reference, 40lbs of meat is what comes in a case of steak and chicken is about 44lbs. A case of steak is about $250ish at cost, and we sell it for about $4 per 4oz portion.
So instead of catering, they wanted to just buy that much made meat. We told them, flat out, that isn't happening, we don't have the time to do that much meat without actively stopping production. While my manager was handling that, I did the math.
For an *entire* case if my math was correct, 4oz X 4 (for the amount of a 1b portion before tax) X 40 (for a whole case of steak) = 2560.
The average catering is usually around $200ish depending on size and ingredients. I told them this, and they left pissed.

I just did this yesterday. I work at Amazon for 10 hrs and this was beneficial af for me. Got the single catering deal and paid $115. I was able to prep 4 bowls since I work 4 days and I made me a bowl to eat for yesterday. I think it’s good if you’re single and work long hrs at work and don’t feel like cooking. Spent less than what I would spend at walmart on top of having to come home and cook it. They couldve gave way more fajitas though

Not me thinking this was affordable. 😭 I moved to Hawaii years ago and there’s no Chipotle here, but I’m pretty sure with how expensive groceries are here, buying the ingredients would probably come out to the same price you paid for all that. 😅
Btw! I used to work in Chipotle and one serving of meat is 4oz or approx. 113g, which is most likely why you ended up with less bowls.

Great Vid i didnt think it would be much cheaper and the cons outweigh the pros sicne food isnt fresh and you have to seperate it. i just started eating chiptole almost everyday for lunch an n get steak and guac and its almost $17. TBH i think making your own bowls and buying the ingrediants and comparing the cost would have been cool to see like by $140 worth of chicken or steak a bag of lettuce, couple avacodos, cans of beans bag of rice pre made pico and see how many meals you can make from it.
    Just food for thought

Fun to watch. Way too much salt. There was potential for much more variety if the flour tortillas were used (maybe with the beans for a veggie breakfast wrap) or the beans used to make a bean dip. I was thinking no why are you adding the lettuce when it needed to be on the side to stay cold but at least you said it was no too bad.

Simple home rice fix (don't eat as I'm losing weight at 300+ lbs and type 2).
Buy a rice cooker. A solid one. Not a $40 Walmart one. Splurge on a Japanese or Korean one. It cooks rice perfectly and you can add aromatics aka spices, use broths in place of water. You can make better rice than Chipotle for less. 🤷‍♂️
