Roasting chicken is one of my favorite methods of cooking. I spatchcock my chicken so all the skin gets brown and super crispy while the breast meat stays juicy.
Splitting the chicken down the middle, and removing the back bone in order to lie the chicken down flat in the cooking pan. This allows the chicken to cook evenly throughout.
I have watched and followed Jamie for a long time now, and he just keeps getting better year after year. Love this guy. There is nothing he's made that i havent liked.

Don't remember honestly it's been that long but whatever you find that goes along with roast chicken. Thyme, Rosemary or ooh try zaatar spice mix. It's the butter hack that takes it to a next level. @@sebeckley

👉👉 Dont make cuts !!! Use a metal skewer to run along the leg and thigh bones to speed up cooking. I do this to speed up eggplants in the ovenor any. Other thick or hard veg that takes alot of tume to cook. 😊 thank me later

I made this a few months ago. Seriously it’s delicious. I’d add a touch more salt and I seasoned my chicken as well a little more but it’s amazing!

At a basic level - season it with salt and put it in an oven until the juices run clear from the thickest part of the meat.
I didn’t know either until I followed Jamie’s recipe.

I looked it up for you. He used basil, flat leaf parsley and marjoram. His recipe says use any soft herbs. You could also add fresh thyme to it.
4 me the best herbs butter ( you make) is with parsley, garlic and chives because i'm someone who don't like basil or oregano.
