You know,,, I've been outdoor cooking for over 50 years. Offsets, direct heat, gas grills, Weber Kettles, Cookshack smoker etc etc,,,,, I never thought I knew everything because I've watched a ton of videos over the last few years and have picked up a lot of tips and tricks. Babyback Maniac, TRoy Cooks, cooking with Ry, Meat Church, Franklin BBQ to name a few. But never have I ever learned as much as I've learned from your videos. Your style, presentation, knowledge and sense of humor are what draws me back time after time. I appreciate your videos very much. Signed, retired oilfield trash from Fredericksburg Tx. Hi Bradley, Brady here, but I’ve been called Bradley 1/2 of my life. I’ve been BBQ’ing Brisket for 20 years, but never thought of using a Select brisket for chopped beef sandwiches. Thank you for that! But the Homemade pickles and thin sauce is sent from “Bradley the BBQ Gnome” and that’s a Beautiful thing!!! You and Jeremy Yoder are my dudes! I watch many other BBQ Channels, however you 2 are my Sinai’s the two that I listen to and take notes from. I was a welder by career for 45 years before a massive injury 3 years ago took my career away 15 years early. I hope that I can get back into my own shop so I can build my smokerz and grillz for our new home. I just want to thank you for all of your blessings that you have bestowed upon me. Someday I’ll shake your hand and thank you properly. Until then, I Truly thank you Bradley. Brady
My dad loved the "BBQ" sandwich at Dairy Queen when I was a kid. This is that next level. I wish he was here today so I could make him this! Thanks Bradley.
@@altongehringer9858 i guess they didn't dare try that in Texas. Bbq of any kind is a tough sale here. Seen a many a place go belly up. And most that are still around need to. Mr. Robinson - I’m visiting Austin from Toronto Canada. And my first stop from the airport was LeRoy & Lewis. I almost died in the heat but the food was worth it! The beef cheek was insane! I also saw the first Chud box - thanks Travis. 🙏🏾. If you visit Austin definitely check out LeRoy & Lewis the only thing better than their awesome food is the people cooking and serving it!
Great video! I’m glad you mention the history of chopped beef in Texas. The popularity of Central Texas BBQ makes everyone think Texas BBQ has always been like that, but that’s just not true. I grew up in North Texas and chopped beef was way more common growing up. Yes even bbq sauce.
I've been cooking select briskets for years. I splurged one time, and got a Prime, and my wife did notice a difference. But then she got mad when I told her how much I paid for it. The Bark is what she loves.
Chuds BBQ (Brad), I NEVER get tired of watching your videos. You are AWESOME! Thanks for providing such great content and tips. Of all the BBQ channels on RUclips, your channel is the only one that drastically improved my skills. And yes, I subscribed and liked...
My mom used to bring home a pound of chopped beef from Underwood's in Brownwood, TX, along with their rolls and some pickles/onions. That's a nostalgic central Texas dinner for me.
Mate, I don't even live in North America, let alone the northern hemisphere but I absolutely love your local history/knowledge tidbits you thrown in. Its super interesting to learn and I hope you keep doing it.
Martins are from my hometown, and the only way they’re better is right off the line. They have a bakery/store at the main plant. It’s like heaven having an open kitchen
As a Central Pennsylvanian with Martin’s rolls and hot dog buns in my kitchen right now, I whole heartedly agree with your love for Martin’s. Love the vids.
Growing up in PA, there was always a bag of Martin's potato rolls in the bread drawer. I'm glad to see that they finally made it to Texas, where I now call home. Now, if I can only convince Sheetz to expand into Texas...
Years ago I was luck enough to get some BBQ from the John Mueller Meat Company in Austin. Amazing food. The brisket had an amazing crunchy peppery bark while the meat still being tender & juicy inside. This reminds me of that.
Good stuff man! Martins is the goat! I remember when they first hit Austin. I was workin at Browns bbq and Basil came by and promised they’d be the next big thing. Man he was right!
Thanks for all these great videos. I'm doing a cheap Walmart brisket right now for the 4th of July weekend cuz that's all that I could find up here in the Yankee land on short notice. Take care and thank you for the wonderful videos entertainment and education. Cheers.
This was so great! My biggest concern was spending a ton of time and money on a high quality brisket just to jack it up. But combining this video, with your weber kettle brisket video seems like a great way to go!
Excellent videos Bradley! Congratulations on 100k + subscribers. My brisket I did after your pulling out all the stops video for brisket turned out excellent. What I would love to see is a couple different smoked bbq beans recipes. Maybe a savory and a smokey. Please don't use canned beans or if you do please make a video using dried beans as well. Looking forward to it!!
My world just got rocked!! Can't wait to try this!! Thank you Bradley Robinson for another amazing tutorial!! What is that metal disk that you made that sauce on? Is that an actual burner?
Nowadays select brisket is about all I can afford so I ain’t wasting it on chopped sammys. I’m slicing it up like it was top notch. Most people never know the difference, or else they are good liars. I did my first overnight rest even though the interweb said it was a bad idea. It made a big improvements that select brisket. Thanks for your inspiration!
I stumbled up on this channel like I do so many things. I'm really glad I did. Got a cheap or less expensive brisket and turned into chopped beef just like you, thanks to you. Fun channel and really helpful. Just subscribed. Thanks.
I often look for select brisket, looking for a larger point. Even select point meat has plenty of marbling, so I'll cube the whole point up for burnt ends for a crowd. Always a big hit. Another great video brother 👏 👍
I used to get ungraded packer briskets from Wally World for practice. It was super valuable because I was able to hone my skills to get half decent results with them and when I moved up to Prime I was basically nailing it every time. I've also had excellent results with choice grade briskets.
Glory to Senor Chud and what really is a so-called "cheap cut." BBQers like to say BBQ is morphing "cheap cuts" into "delishiousness," but as a life long griller and smoker of meats, I have never considered even a Choice brisket to be a cheap cut. Pork shoulders and pork steaks are better to me any day flavor wise and really are cheap. So good on Brad for showing real skill so well cooking a humble and actually cheap Select brisket. I'd wager if Brad did his regular full trim and sliced that normally, 9/10 folks couldnt tell that Select from a Prime. And glad to see bootsnakes!
Didn't get to watch this for a couple hours after it dropped, but instantly remembered the A Frank reference about the juicy lemon. I also enjoyed "Boil away, boil away, boil away!" to the tune of Orinoco Flow.
It's so rare to find a chopped beef sandwich at a restaurant now. I ran three different BBQ's in the 90s and we used the flat for sliced (which also makes a tremendous sandwich with mayo and white onion) and the point for chopped, mixing it with a prop sauce we developed.
Good to see someone smoke a brisket that most weekenders can afford. Harry Soo does a video like this from time to time. And yes, chopped beef sandwiches are awesomeness. Also, put some of it in a processor and make brisket meat spread.
