A game is bound to have bugs especially when porring from a different or older version of a game engine since the source engine was a heavily modified version of gldsrc they didn't expect many bugs but because people like you review bombed it on release valve never was able to fix the bugs
I think they were just honestly confused at what that function does, more than the fact that it was "poop" I guess he assumed that reading off that code it was some sort of enemy that had a "poop" attack before he saw the model. We shouldn't assume that the people who coded this knew EVERYTHING there is to know about Half-Life or it's enemies and weren't just there to fix code
one change you didn't mention is that maximum ammo capacity in hls is now dictated by convars, which it wasn't in HL, being hardcoded also if you change the convars to allow you to carry over 999 of any ammo type, then the moment you exceed that number the game will crash at least in half life source, garry's mod allows you to carry up to 9999 of any ammo type without issue
it's cool to see the stuff where they kind of half-bakedly tried to improve the most random things, it's like whatever occurred to them at the time that they could get that done that day by themselves sort of things

5:41, curious, do you think this is possibly why the first encounter with the grunts is messed up in Source? Here's another weird change that I didn't see mention in the video, for some reason the Source LD grunt model has a different backpack texture compared to hl1's LD grunt model.
