Just had an omelette. :) Russian-style, oil+butter and tomatoes goes first for a minute and then eggs beaten with one spoon of flour and a pinch of salt. Yum.
I tried it and slightly overcooked first time but tried again the next day. It turned out right as I tried to remember Jamie said, 'Slightly undercook it' on the pan and by the time you transfer it to your plate, it would be perfect. Thanks Jamie Oliver.

You do the first one third fold flipping in the pan. It takes a little practice. The third fold comes as you demonstrate when you plate it. Her rules: 2 eggs minimum per person.3 ingredients maximum, excluding herbs and spices.

I actually like color on my omlette, as long as you don't salt it it usually isn't leathery and that complex brown flavor is great.
I make this regularly . It's so easy and really delicious.
