Is it a must that the clean plastic bottles and caps be pasteurized before filling? And at what hot temperature should the plastic bottles and caps be pasteurized?
Yes it is and this is to prevent cross contamination. The plastic bottle we used is Polypropylene (PP) which can resist water boiling temperature. It's melting point is about 130 to 171 °C (266 to 340 °F).

How long will the juice last? Why salt is added and no citric acid?

The pasteurized juice would be last for 1-2 weeks under refrigeration. Salts was added to enhance flavor (and citric acid could also be added). However, pineapple juice we used was high in acid content and therefore, lowering pH than 4.5 which helped to make product stable.

How long should one allow the sample to cool down in the iced water?
Simply let them cool to room temperature (about 5-10 min) before stored in refrigerator.
at what temp do you pasteurize the PET bottles? do they not warp?

Whats the purpose of putting the newly filled bottles with "Iced water bath" ? is it to prevent deformation of the bottles?
The bottles are pretreated (heated to kill microbes) but the rapid cooling is required to complete pasteurization of the Pineapple Juice - once it is super heated the juice needs to rapidly cooled to stabilise the "good" microbes that are not killed off.
This process works with any liquid that utilises microbes to perform reactions for example milk, mead, forms of alcoholic beverages etc.
But to point out this is done because of course no one is going to drink 10litres of juice in one go and pasteurization is to preserve the juice until it is spoilt

How can I have get all the equipment?
Some measuring tools such as portable pH meter, hand refractometer and thermometer, you can search and buy from internet. You can also modify some equipment used in video such as common stainless pot (and put directly on stove) instead of using pasteurizer.

Total de sólidos disuelto. grados Bx si no tienes uno eléctrico puedes usar un refractometro de los de 0 a 32°bx. Lo que hicieron fue coknservar el mismo dulzor después de diluir lo al 50% con agua.

Submerging 'plastic' bottles in 'hot water', c'mon man BPAs!
Thanks for your concern. The plastic bottle we used is Polypropylene (PP) which can resist water boiling temperature. It's melting point is about 130 to 171 °C (266 to 340 °F). PP is not a polycarbonate plastics which containing Bisphenol A (BPA). From the appearance, PP bottle (in video) is opaque whereas, polycarbonate bottle is clear.
