Really cool. Thanks for the information. I'm from Brazil and I buyed some fried vegetable chips in a maket and they where diferent than normal chips. After thinking how they could've made those, I tryed seraching for a vacuum fryer and there it was.

Whats the purpose of putting the newly filled bottles with "Iced water bath" ? is it to prevent deformation of the bottles?
The bottles are pretreated (heated to kill microbes) but the rapid cooling is required to complete pasteurization of the Pineapple Juice - once it is super heated the juice needs to rapidly cooled to stabilise the "good" microbes that are not killed off. This process works with any liquid that utilises microbes to perform reactions for example milk, mead, forms of alcoholic beverages etc. But to point out this is done because of course no one is going to drink 10litres of juice in one go and pasteurization is to preserve the juice until it is spoilt
