I left Mumbai in 1999 and have been searching for an authentic pav recipe for the last 20+ years. While I doubt the pav walas brushed their pavs with milk or butter (maybe they used refined oil), I can safely say that this recipe is the closest match to what I saw and ate in Mumbai as a kid.
