I love to make pasta with fresh and delicious mushrooms. Actually I just made a video recipe for a mushroom pasta with a homemade tomato sauce last weekend.
Just made this using Shiitake, Wild and Closed Cup Mushrooms. I also added Salmon and Spinach. I might have used a little too much olive oil or put my pasta water in a little late in the process because there was a fair bit of liquid still in the pan when I served out the last of three portions (mine), but it really turned out good. I poured a little more olive oil and squeezed some lemon juice onto it once on the plate, and grated some Parmagiano Reggiano cheese onto it - the shop didn't have any Parmesan, but it does the job just as well.
I've taken to using chopped garlic and basil on the mushrooms and tomatoes and adding cubes of feta cheese when I put the pasta in the pan to make for a lovely creamy texture.
If there would be a game about Gennaro, his catchphrase would be *It's so easy!!* On a side note.. He would probably call you davide no matter what name you chose for yourself.
@@kidandresu exactly, it is only when the miserable English get their dirty hands on it that it becomes like some weird phantom that has to be mashed into a pulp and banished into a sauce! Blame their supermarkets for banishing flavour and character from everything they sell to their wrongheaded masses!
I'm having a 10-minute break at work...the coming 6 hours of my shift...will be hard, after seeing this. And by the time I'm done all the food-markets are closed...pitta-junk, here I come again
Here in Barcelona when mushroom season is on (now for example), i could get a very good variety of mushrooms for a good €€€ range, even in the neighborhood's little mini markets. Out of season, another story :)
