Gennaro Contaldo's Tagliatelle with Mushrooms and Truffles Recipe | Citalia

- The region of Umbria is known as the 'green heart' of Italy. Often overlooked for its more well-known neighbour, Tuscany, Umbria has much to offer its visitors, from beautiful countryside and historic towns to delicious, regional dishes. Umbria is particularly famous for its black truffles and Gennaro has used the region as the inspiration for this flavoursome dish.
TAGLIATELLE CON FUNGHI MISTI E TARTUFO
Tagliatelle with mixed wild mushrooms and truffle
Ingredients
4 x servings
400g mixed wild mushrooms, eg. porcini, chanterelles, hedgehog, wood bluwits
6 tbsp olive oil
2 garlic cloves, chopped finely lengthways
1 small red chilli, roughly chopped
2 tbsp fresh parsley, roughly chopped
120ml vegetable stock
Salt, to taste
300g fresh or dried tagliatelle
Salt (for pasta water)
40g black truffle
Truffle oil
Grated parmesan (optional)
Method
Clean the mushrooms with a cloth and brush - do not wash wild fungi as the flavour disappears. Roughly chop any large mushrooms and leave the small ones intact.
Heat the oil in a frying pan, add garlic & chilli and sweat gently until softened - do not burn or allow to brown. Raise the heat a little, add the mushrooms and stir well for about a minute. Add the stock, keep stirring and cook for a couple of minutes until the liquid has evaporated slightly. Stir in the parsley, some salt and remove from the heat.
Meanwhile place a large saucepan of slightly salted water on the heat and bring to the boil. Add the tagliatelle and cook until "al dente". Drain the pasta and add to the mushroom mixture, stirring well, drizzle with truffle oil and shavings of truffle and serve immediately with grated parmesan if desired.

The best lentils in the country and possibly the world; wild boar and fantastic salamis; the best cut porcini; black truffles; great undiscovered wine and olive oil and fantastic places to visit such as Assisi, Perugia, Spello and the list goes on and on. Gennaro knows this and this recipe will transport you to 'The Green Heart of Italy'.

Found some wild Porcini's growing not far from where I live the other day. Cooked and ate some just today and "oh my my" the taste was to die for. I'm actually hooked on foraging for mushrooms now. Back out tomorrow to hunt for more.

Any pasta dish would be amazing with that much truffle placed upon it! That was like $300-$500 of truffles here in the States. I so miss Italy....Umbria is amazing as well!

COVID-19 lock down has been a great time to watch cooking vids, love this man have made his carbonara recipe as well as his Bolognese ragu in the last few weeks, absolutely wonderful and simple. Making carbonara again tonight for dinner. My Husband is of German heritage but he would eat pasta for every meal if he could. Found some excellent tagliatelle from Italy at Wegmans, the brand is Monograno Felicetti I think you could also make an awesome lo Mein with it as well. I did simmer the Bolognese much longer than he does because I made a larger batch, it tastes even better left over after the flavors meld longer.

@@Company-59 good quality black truffles cost around 75 bucks an ounce, and he had a truffle the size of an onion there which was probably around 8 ounces. so yeah, it was probably over 500 dollar for just that one truffle. white truffles cost double

It's the pasta water he cooked the pasta in. It has starch so it thickens the pasta sauce

Truffles are expensive as hell.
Seems a bit heavy on truffles. Probably the most expansive Gennaro's recipe here. I bet it will be good enough without truffles and more delicate. I dont see any reason to use the expansive mashrooms like chantarelles and destroy their lovely taste with overwhelming truffles. Still nice vid - why is he so so good to watch :)
