  • The most popular and authentic Street Food in Turkey is Kokorec - Grilled Lamb Intestines. There is the Original Izmir Kokorec, served fried in Bread. Or the Istanbul Kokorec, which also includes Peppers and Tomatoes. Kokorec is cooked on a horizontal skewer in a Special Grill Oven. It is then chopped up in portions and seared on a hot griddle. The spices are Salt, Pepper, Thyme, Cumin and Hot Paprika Powder. It is eaten both in Bread and on a Plate with Side Dishes as a Main Meal. Kokorec is a Dish mainly from Asia Minor and the Balkans, where it is also called Kokoretsi.

    [2] The Kokorec comes from Usta Kokoreç in BelgiumThe Kokorec production is extremely time-consuming and requires the highest hygiene measures about cleaning the intestines, which would be associated with high costs if you were to make these in a shop and produce it yourself. That is why Midye47 has the skewers delivered by the experienced specialist company Usta Kokoreç in Belgium. Usta Kokoreç has been in Izmir since 1990 and is one of the leading and high-quality companies in the EU.
    [3] Kokorec means Grilled Lamb IntestinesKokorec consists of Lamb Intestines wrapped on a skewer. The inside of such a casing roll and the intermediate layers consist of Lamb Fat, so that dehydration is prevented when grilling and roasting.
    [4] Çiğ Köfte / Raw Meatballs - The Bulgur VersionÇiğ Köfte are strongly seasoned Turkish Meatballs and are made either from chopped, low-fat beef or, as here, the vegan variant made from Bulgur, which is also very popular in Turkey. A fine Bulgur serves as the basis, which is refined with Vegetables and Spices.
    [5] Midye Dolma / Mussels stuffed with Herbs and Spices RiceMidye Dolma are Turkish-Style stuffed Mussels and are known as a popular Street Food Snack on the Streets of Istanbul. The Mussels are filled with Herbs and Spiced Rice and then sprinkled with freshly squeezed Lemon Juice just before eating.
    [6] Istanbul KokoreçIstanbul-Style Kokorec is also mixed with Tomatoes and Peppers when frying.
    [7] Izmir Kokoreç - The OriginalIzmir-Style Kokoreç is the Original Version without Vegetables.
    [8] Kuzu Kelle / Cooked Lamb HeadKuzu Kelle is boiled Sheep's Head. There are two traditional ways of preparing it: either boiled or roasted in the oven. For locals, sheep's head is an absolute delicacy that is commonly enjoyed in local restaurants.
    [9] Kokoreç Halka / Kokorec Rings served on the PlateKokoreç Halka is the Plate Dish and is not chopped up but served in roughly cut Rings. There is also toasted Bread, Salad, Hot Peppers and Vegetables as well as fresh Ayran as a Side dish.

    I love turkish food, my town Braila was in otoman empire for some time, we have lot of turks, greeks, bulgars, so our cuisine is a mix of them, love the turkish sweets so much

    The Turkish word kokoreç was first attested in Lokanta Esrarı; a short story written in 1920 by the Turkish author Ömer Seyfettin. The author wrote that the first time he heard of kokoreç, was when it was presented to him as a specialty of an Athenian who worked in an Istanbul restaurant; it was described as a Greek dish made from small lamb intestines.     Almanyada sakadat yasak olması lazım, eu kriterleri gereği kokoreç de dahil olmak üzere her türlü iç organ yasak, bu arkadaşlar özel izin mi almışlar acaba?

      Sakatatlar AB'de yasak değil. Bu, onlarca yıldır hiçbir gerekçe gösterilmeden yayılan bir söylentidir. Sakatatı işleyen Alman yemekleri de var. Hijyen koruma yönetmeliklerinin gereksinimleri sadece Türkiye'dekinden çok daha yüksektir, dolayısıyla bu yüksek maliyetlerle ilişkilidir. Bu Kokoreç, 1990 yılında İzmir'de kurulan ve bu gereklilikleri takip eden ve Avrupa'daki birkaç tedarikçiden biri olan Belçika'dan (AB) Usta Kokorec firmasından gelmektedir. Sakatatın işlenmesi neden yasaklanmalı? Doğanın bize verdiği bir hayvanı öldürürseniz ve biz onu yemek için öldürürsek, o zaman onu tamamen yemelisiniz ve hiçbir şeyi atmamalısınız. Beğenip beğenmemek elbette her zaman olduğu gibi bir zevk meselesi. Berlin'den selamlar✌️

      Hi, shortly afterwards you can clearly see that they only leave it on for a short time to defrost and then pull it off after a few minutes. Otherwise it would have an even more special taste😂✌️

    kokorech is made from animal intestines..turkey is not accepted into the european union for making kokorech, while Germany, which is in the European union, is also free🤣🤣🤣

      Das wird auf Wunsch so zubereitet, wie du es gerne hättest. ;) Es gibt auch sehr grob geschnittene Ringe die aufs Sandwich kamen, war aber einfach der Länge des Videos geschuldet, dass es keinen Platz mehr im Film gefunden hat. ✌

    Kokorec is not of turkish origin, only the name is. It was a greek delicassy since the time of the trojan war called "plekti" (πλεκτή) or "mimarkys" (μίμαρκυς).
