Cottage Cheese Flatbread~ Great for Diabetics or just Low Carb!

- Cottage Cheese Flatbread
2 Eggs
8 oz Cottage cheese
1 TBLS Italian Seasoning
1 tsp Garlic Powder
1 tsp Onion Powder
Pre-heat oven to 350 degrees
Blend the ingredients all other, pour onto a sprayed parchment-lined flat pan (cookie sheet WITH SIDES), and cook for 40 minutes. Mine took this long, yep I was surprised too. But it was perfect!
NOTE:
I would suggest adding a “flavor” of something, like Sriracha to add a bit more taste to it. Or just eat it the way it is, as a flatbread. I think Sriracha would taste good though 😊
My son asked me to make this! We were pleasantly surprised at how delicious it actually is! I spiced it up with seasonings and chili flakes…. I made sandwiches using buffalo chicken and all the fixings! It held together well too. Crazy easy and oh so yummy! 😋

I made this. Real good. I also poured some to make them round like a tortilla n put them in the refrigerator. When I was ready to eat a breakfast taco I heated it up in the skillet and put my bacon, eggs, and cheese in it. Worked perfect! Next I’m gonna do regular tacos. I’m certain it’ll work. I also cut two pieces the size of bread n just made a sandwich. Worked great.

I made this yesterday and it was better than any bread I've had! You can season it however you want. I am going for high protein so I add a scoop of whey protein. I also add about 3g of Nutritional Yeast and that gives it a slightly cheesy flavor. I mix the seasoning in the blender, then do Italian Seasoning on top after the pour. Next I'm trying egg whites just to see if I can get a 20 kCal slice of bread with no carbs - that would be great! Your video was great, shows how simple it really is.

Made it today..so versatile..it’s a favorite along with cloud bread..(uses egg whites, egg yolks, and crème cheese)

I watched the videos backwards. I just watched the whoopee pie one first😂. That flatbread looks very easy to make. I wonder if you could make pizza with it. I should try making that sometime. Probably could make it ahead of time then reheat it with toppings. Have a good night Teresa❤

I made one today it does real good to hold the meat n veggies for a sandwich like/wrap.

It's really weird that this came up today. I make a simple keto flatbread every Sunday but today I didn't have the quark (German dairy product) that I use. I wondered if I could substitute the cottage cheese that I do have, but it was only a fleeting thought. I didn't look anything up.

Just saw your video, loved how you presented the info. What a natural you are at filming, very pleasant! It would have been a hoot if you picked up that piece of meat and called the 5 second rule! I wonder if you added some flour to the mix to get a thicker flat bread? Thanks!

Adding flour would make it thicker but then it would be higher carbs

you have to put some seasoning on it before baking - i use everythingbut the bagel seasoning
I did add seasoning lol Italine, garlic, and onion powder. I just think it needed a BIT more. But it was still very good!

I just used Olive oil spray on my pan and parchment paper. As for how long, mine took I believe it was 40 minutes in the oven. I would say a single batch would still take about 30 minutes, but I would suggest keeping an eye on it around 20 and see how it is coming along. Remember it will all depend on your own, and how big your pan is also. The thinner you make these, the less time they will take :) Good luck and ENJOY! I just had them again for lunch yesterday :)
