It annoys me that one of the macaron shells did not have a pair
its for the cook to taste test the one shell or to allow for a messed up one.

Funny, I actually made these and I made 16 shells. Somebody care to explain the logic in that for me please? I am so dang happy and confused it is strange.

A tip for other people: i made the recipe 3 times, and it only worked when i put twice the amount of almond flour, let in the oven for 25min and first mixed all the dry ingredients together, not putting one by one into the egg mixture (or else the merengue started to melt cause of the pure sugar). Still, it may be due to the ingredients I'm using or something else, but I hope this comment helps someone having the same issues

Diana A no they're not lol, high quality macaroons have no air pockets. It's just they're extremely hard to perfect.

Tip: use lemon juice to clean your tools before you whip the whites, they don't make much so if you want more, make double the mixture, MAKE SURE YOU TAP EVENLY otherwise your macaroons will spill over and collapse.

If you actually make this, instead of watching and critiquing the video, you can add Matcha to the filling yourself.
the matcha would overpower the whole thing if you put it in the filling. the flavour is much more subtle when you put it in the cookie + you can still taste the cream cheese
If I were to make these I'd go for a white chocolate ganache, red bean buttercream, or just straight up anko filling. I mean, I'd probably have to order matcha powder online so why not buy some anko when I'm at it?
If you dont have almond flour, you could use instant oat and blender it. I hope it helps!

@Taylor Hunt and @Nora M. - I actually tried this recipe for the first time about a month ago, and surprisingly they worked i was not expecting them to, so i was amazed
but i had to watch this vid 348923840328490320 times to actually get them right and i was EXTRA careful of everything i did
