    (I’m Mexican, before anyone asks) I believe that queso Fundido is one of the recipes that actually go better with flour tortillas, though, it still slaps with corn tortillas.

    I worked with a buddy who came over from Mexico, he would pull out an electric camping stove top ten minutes before lunch break and get the food cooking, was a different meal with tortillas every day and we would toast our tortillas. It was the spiciest dang food 🥝 ever ate and the first time I ate his cookingz I had to hide and cry while still eating because it was so hot but so good. He was a good man, helped me a lot, he said it's because I listen to him 😂

    I made this recipe this weekend and it did not disappoint. I could not find that same chorizo brand, but I just used the local brand I like. Easy and delicious.👌👏🙌👍

    This was the first video I ever saw of you and honestly it changed my lifestyle. I now always have chorizo and queso Oaxaca in my freezer for an easy meal.
    Also I've always loved tex-mex but this was the dish that gave me the confidence to start making it for myself! I am still a salsa baby but I love making my own Queso Fundido and also even just mentioning it always impresses the Latinas at my local bar 😂

      @lordjaashin when it comes to chorizo, the meat is already seasoned straight from the packaging. Heavily seasoned mind you, and the salt content on the cheese adds a lot of flavor already to the dish. So the way he is making it is pretty standard given if you know how the flavor of the things you're using are.

    I remember trying this dish 5 months back for the first time. It's one of those simple yet delicious snacks. I even hit mine with a little bit of decent quality tequila while it cooked.

    I used to work at a Mexican food restaurant and the Fundido was amazing when hot. It was also fun because we tossed tequila on the hot skillet while near the table and lit it on fire

    First time ever tried chorizo I already knew cheese was all it needed for it to go to the next level looks super good honestly. I think the spice of the sausage is what makes it so good.

    Slice onions and jalapeños throw them in a skillet or in foil on a grill til soft or slightly charred and add that and for even more flavor make guacamole and add that too

    Here in Missouri we call it Mexican grilled cheese. It's super yummy, we use ground hamburger because chorizo is too spicy. 🌶️🥵💦

    I grew up knowing this dish as “queso flamado” basically same exact recipe except we would add just about a quarter can of cerveza in the pan before putting in the oven. So delicious!

      Man I remember the queso flameado I had in Monterrey NL.
      A big block of white goats cheese with cooked chorizo de marrano. There was chiles asados all around it. The waiter poured some alcohol on it, a match, and whoosh se aprendio. He let it cook for about 8 seconds then started mixing the melting queso in on itself extinguishing the flames.
      Out came the hot tortillas de maiz, and everyone dug-in making tacos out of the flameado.
      Then biting on a chile serrano for a little spicyness! Oh heck yeah! Washed down with cold Carta Blancas. Gooood Tacos man!
