- INGREDIENTS:
1 Hard body Chicken, cut in portions
Salt, as needed
4 Bay leaves
8 Cups, Boiled water
1 Onion, diced
1 Tsp Paprika
1 Tsp Curry powder
1 Chicken stock cube
4 Cups Boiled water.
METHOD
• In a large pot, add chicken pieces, salt, bay leaves, and 8 cups of water and boil the chicken until there is no water left.
• Brown the chicken with the excess fat in the pot, then add onion and spices and sauté for 2-3minutes.
• Add the remaining stock cube and water then cover pot with lid and leave it to cook on low to medium heat until the sauce has reduced and thickened.
Tip: Serve with pap or Samp.
Serves: 5-6
Cooking time: 2 hrs 30min.

North of Europe. hard chicken was what our grandparents cooked, straight from their gardens. until the soft, farmed chicken took over. but now we started to get hard chicken again. so looking for recipies, this looked amazing! will definitely try, perfect for cold snowy days :)
