Yes, just remember to make the gradient map a child layer to the new person by dragging its layer on top of the person's layer. Otherwise, the gradient map will effect the person *and* the background.
As soon as I move the color pointer over the image frame, the displayed color changes to white. In the following text, it is not possible to select any of the three colors from the newly created color palette. It is not working for me yet.

Swatches are turned off by default, you need to turn on via WINDOW

Go to the Window menu at the top, and then you'll see "Swatches" in the menu.
