Not simple method of teaching

What's difficult about this method? Make a slurry with potato and flour, add boiling water, keep stirring till it stiffens. Leave it in boiling water to prevent it from becoming too cold. Then, once the dough is in a manageable temperature, stretch it on a flat surface. Add flour to form an opaque dough.
