I grew up on Staten Island and for every family member's birthday my dad would go to south beach bakery called Rosas or Rose's bakery and buy a cassata cake. It looked just like the one in this video except it had rum in it and was decorated with roses. I remember the citron fruit and little chocolate pieces in it.

Pan di Spagna soaked in Marsala is wonderful, also, since marsala is a wine and not a hard liquor, all ages can enjoy it. The children will like it and it will let them develop their palate.
I try to often eat new things/things I normally would not order in order to not being bored (because I am the epitome of first world problems). So I once ordered a Cassata, even though I normally HATE candied fruit and am also not too fond of cakes etc. Fortunately it was a high-quality restaurant using only the best ingredients (I only realized then that candied fruits do not necessarily have to taste awkward) and it was one of the best things I have ever eaten!
I am looking forward to making this. Your video was wonderful and you are so down to earth. I have not seen a laundry sprinkler since my mom used to our clothes as kids. Hopefully I can find one online. Can the marsala be brushed on instead, or does it not put enough alcohol in the cake by brushing?

The problem with cutting it is that the tops will be very crumbly and might not hold together. But you can bake the Pan di Spagna in a sheet pan, cut the cake into 3 pieces and stack them one on top of the other. It makes a beautiful presentation, and you can proceed as we did for the round one.

Yes, of course. You can use plain Rum or diluted with plain sugar syrup which is equal quantities of sugar and water brought to the boil and simmered for 5 minutes, or 1 part sugar and 2 parts water for a lighter syrup.

When I was a kid there was a restaurant my mother and I went to that made a dessert they called cassata, but it just had a thin layer of chocolate cake at the bottom, and otherwise it was rounded layers of _ice cream_ in different flavors... I think it was pistachio, strawberry, vanilla, and chocolate, though I don't remember the order. All coated with a ganache. Super different.

A simple sugar syrup: one part sugar and two parts water. Bring to the boil, simmer five minutes, cool and refrigerate!

Make it without fear, I make it with Marsala which is a sweet wine, and the amount of alcohol is so minimal that you can give it to children!
