    When my sister and I were young my mother would give us eggs with sugar and marsala many weekend mornings. We loved it so much, it was delicious! Thank you for the beautiful videos, recipes and memories!

      La cassata che si compra in una pasticceria é coperta di pasta reale e decorata con frutta candita. In casa non abbiamo i mezzi ne siamo cuochi professionisti. La Cassata Siciliana é una torta di Pan Di Spagna inzuppata di sciroppo di zucchero e liquore, farcita con ricotta zuccherata e condita, e completata con una glassa di zucchero a velo.e decorazioni.

    When I was younger, my mom would give my me and my sister an egg yolk with a tablespoon of marsala wine and a tablespoon of sugar before we went to school.

    I grew up on Staten Island and for every family member's birthday my dad would go to south beach bakery called Rosas or Rose's bakery and buy a cassata cake. It looked just like the one in this video except it had rum in it and was decorated with roses. I remember the citron fruit and little chocolate pieces in it.

      Of course you can use rum which is delicious, but I like to use Marsala because it's a wine rather that a liquor, and children can enjoy it too!

      Pan di Spagna soaked in Marsala is wonderful, also, since marsala is a wine and not a hard liquor, all ages can enjoy it. The children will like it and it will let them develop their palate.

    I try to often eat new things/things I normally would not order in order to not being bored (because I am the epitome of first world problems). So I once ordered a Cassata, even though I normally HATE candied fruit and am also not too fond of cakes etc. Fortunately it was a high-quality restaurant using only the best ingredients (I only realized then that candied fruits do not necessarily have to taste awkward) and it was one of the best things I have ever eaten!

    I am looking forward to making this. Your video was wonderful and you are so down to earth. I have not seen a laundry sprinkler since my mom used to our clothes as kids. Hopefully I can find one online. Can the marsala be brushed on instead, or does it not put enough alcohol in the cake by brushing?

      The beauty of this cake is that it can absorb a lot of liquid and it will still hold its shape. I love the laundry sprinklers, but you can certainly use a spray bottle!

      A sheet of marzipan rolled out to cover the cake is traditional and so is sliced almonds on top of ricotta icing. Both are authentically Sicilian! Happy Birthday!

      You haven't seen a laundry sprinkler since we all got a dryer! I was surprised that you could still get one! Of course, you can also use a spay bottle. The Cassata is delicious.

    Oh, dear Giovanna! What a tasteful dessert! What do you recomend instead of Marsala? This is because some people don't drink alcoholic beverages for cultural/religious/health reasons. Cheers from Chile.

      A simple sugar syrup: one part sugar and two parts water. Bring to the boil, simmer five minutes, cool and refrigerate!

      Light sugar syrup: mix 1/2 cup of sugar and 1 cup of water. Bring to the boil and simmer for 5 minutes. Cool, refrigerate, and use instead of marsala.

      The problem with cutting it is that the tops will be very crumbly and might not hold together. But you can bake the Pan di Spagna in a sheet pan, cut the cake into 3 pieces and stack them one on top of the other. It makes a beautiful presentation, and you can proceed as we did for the round one.

    Giovanna, can one substitute Rum or another flavor for the Marsala? I plan to make this for my daughter's birthday, one of her favorites, but she has a reaction to the Marsala.

      Yes, of course. You can use plain Rum or diluted with plain sugar syrup which is equal quantities of sugar and water brought to the boil and simmered for 5 minutes, or 1 part sugar and 2 parts water for a lighter syrup.

      I have not made cassata ice cream, but you can serve the ricotta filling of the cake as a "pudding" just chilled as is, but not frozen.

    This is beautiful! I was waiting to see your #1 Taste Tester tell us how wonderful it was! It looks utterly delicious and I’m going to share with my wife. She is the baker. Or maybe i’ll try and surprise her? Hmm her birthday is 7/18. I have the quiche/tart pan with the removable bottom already. What are the other pans called with the “well” around them?       Make it without fear, I make it with Marsala which is a sweet wine, and the amount of alcohol is so minimal that you can give it to children!

    Huh. Interesting. When I was a kid there was a restaurant my mother and I went to that made a dessert they called cassata, but it just had a thin layer of chocolate cake at the bottom, and otherwise it was rounded layers of _ice cream_ in different flavors... I think it was pistachio, strawberry, vanilla, and chocolate, though I don't remember the order. All coated with a ganache. Super different.

      Most home cooks are not equipped to roll out and fit a huge sheet of marzipan to cover a cake, for that you go to a pasticceria and leave it to the professionals!

    She doesn't put any flavoring in the ricotta....okay. But then she uses fluted cake pans and then covers the sides with icing and almonds. This makes no sense.

    This is a BEAUTIFUL RICOTTA CAKE.
    I'm sure it's very tasty but..... It's NOT....CASSATA SICILIANA.
    It's like asking for a cappuccino and receiving a caffe' latte.
    Still good, BUT.... not quite the same.

      Cassata is Pan di Spagna moistened with liquor, filled with ricotta and candid fruits and covered with marzipan and decorated with candied fruit. Mine is a close enough variation.

      Thank you. I appreciated your comments; but I think that rolling out a sheet of marzipan to cover the whole cake as the professionals do in pastry shops in Palermo, is a little daunting for the home cook. This is how I make it at home.
