I also tried doing this a few months ago. I used two 4051, two analog in, and common control. Sadly, 4051 multiplexers are very prone to crosstalk so i had to find alternatives, which I also did not find yet. EDIT: I have recently tried using TCRT5000, and there has been no crosstalk so far, but it has some small noise(maybe my from my laptop USB port). I think the 4051 Multiplexers have a hard time isolating voltage spikes between inputs.
