Making CORN Cob Syrup at Home | Taste like Maple Syrup

  • This is SOOOO GOOD! Wow. I'm still impressed days later. We started with about 25-30 cobs of sweet corn cobs. Put them in a stock pot and added enough water to cover them. Brought to a boil for a good 30 minutes, and then simmered for another hour. Pull out the cobs, and then strain the liquid with a tea cloth. Bring back to a boil and add about 5-6 cups of brown sugar. Keep boiling it down. Once you get about 1/2 way reduced, you'll start to notice fine bubbles forming. Once there, it's time to start checking the temp. You're shooting for 220F temp as your target. Once you've reached temp, remove from heat, place into pint jars. And water bath can for 10 minutes. Jars will seal up, and you now have shelf stable corn cob syrup - that tastes like it came from a maple tree ♥

    Corn cob stock is amazing as well. Just cook the cobs down in water. We can it and use it in soups and anyplace chicken or veggie stock is used. Enjoy!

    I found this in an old Mennonite cookbook my uncle gave me. I never add the vanilla but may try it. You could add maple syrup flavor if you like. Use a big pot because it will foam up some. It is not necessary to blend the sugar. I just drop it in. it is easy to overcook so make sure you check it's consistency periodically. I have overcooked it before and it will turn to sugar crystals. You can heat it up in microwave to dissolve them. Also, you can use this corn cob stock for a stock to cook soups in. Once I open the jar of syrup, I do keep it in fridge because it can get that mildewy foam on top just like maple syrup. Thank you again for mentioning us.     The creamy bits off the corn have such good flavor. I wouldn't worry about it looking "pretty".

    I could not be more excited for this video!! I processed over 100 cobs of corn, I now have corn syrup, corn cob jelly and corn broth in addition to 40 pint jars of canned corn. Thank you and all the other youtubers who put all this wonderful information on the internet!

    Thank you, Thank you, Thank you! Miss 11 saw this video and was DYING to try it!... She is now a die-hard fan of food preservation! Your syrup won her heart ;-) So with 7 jars of syrup now in my pantry the only question was what to eat it on?...She has been eating biscuits, pancakes and she is even putting syrup on her Cachapas!     I make syrup with just sugar, water and a few drops of vanilla and maple extract, so I'll make a syrup with water and sugar, and o e with corn cob water and sugar and compare the taste. Will be tasty experiment I'm sure. Side note: last year I grew corn and pretty much every year had worm damage that I had to cut away. This year I grew the corn under agribon covers until it grew too tall. This corn had zero worm damage, so I will grow corn u derived covers this way from now on.

    Have been making this syrup for so many years, and yes it's a old Appalachian recipe. It stores perfectly fine. You need a bigger stock pot to be able to make a bigger batch. Will give you a safety heads up to don't have your propane tank under your cooker. Do all my canning on my propane stove outside. Take care and have a blessed day. 🍀

    If the corn is milky once you take it off the cob, you can rinse it and use that rinsed water in with the cobs. And to keep the Cubs under use a slightly smaller metal lid and weight them down a bit. You can also ferment the corn cobs and then distill it and age it for whiskey.. Its a very versatile fruit.

      Sara, please tell us more about fermenting the corn cobs. Do you need a distiller in order to make the whiskey? My grandfather used to make what he called Mountain Hooch, otherwise known as Moonshine in the Tennessee Appalachian mountains. He would drive his horse-drawn wagon around and sell a BBQ Pulled Pork lunch with Cole Slaw, Corn-on-Cob, and biscuits to the minors. My dad wrote that he would help his dad, grandpa, and uncles stay up all night and cook pigs in a huge ground pit. The uncles and grandpa would have the moonshine going at the same time, and grandma and the aunts made the coleslaw and bread for the sandwiches. Dad wrote that their lunches got so popular that they opened a lunch kitchen where everyone would come to eat and secretly they would sell their moonshine to the men out of the wagon in quart jars. I just love old stories from the past.

    Rachel, I made Indian fry bread this morning and used your corn cob syrup for my syrup and butter on it. OMG I almost cried, it reminds me of Farmers Favorite syrup my Memaw always had when I was a kid. That company went out of business years ago and that is the closest thing I’ve found.     I know this video is 2 years old at this point, but I have never forgotten about it. I was able to grow enough sweet corn in my garden to can this summer. I currently have a giant pot of this syrup boiling down! Can't wait to dig into it. Thank you again for sharing this!!

    I just made my batch of corn cob syrup. I took your advice and only put in half of the sugar the recipe called for and tasted it, and it was fine with that amount. My corn was so sweet that I don't think it needed the extra brown sugar. I added a teaspoon of vanilla paste towards the end and it really rounded out the flavor. Thanks for the video I am glad my cobs didn't go to waste.

    I jarred 16 pints of cork kernels yesterday plus 3 Quart bags for the freezer. I'm going to be making this today AND corn cobb jelly. I have a 3 burner chefs stove and I LOVE it!!! Such a time saver. My kids can go through maple syrup like crazy in this house so I'm excited to try this and have a cheaper option available

    I can't wait to try this! My mom used to serve dark corn syrup for pancakes and we loved it! We liked it better than maple. Maybe it's a Midwestern thing but it's not strange here. I'm so glad you shared this!!!

    What a great share! I will definitely adding this to my pantry stock. We like roasting the cobs for making corn stock also! We wouldn't be with out our Camp Chef. Our stove died at the end of April last year so we did all of our canning on it. My new stove didn't show up until December.

      Our seasons are just starting harvest and winding down and your season is just getting ready to go! That means my other favorite gardener will be ramping up his videos. Self sufficient me I think is his channel. Adorable fella.
