It’s important to not disturb the sugar mixture as it cooks so as to not form crystals. Also, be very careful when SLOWLY pouring the boiling mixture into the egg whites as they whip up 👍🏻
Hi! For marshmallow fluff there’s no gelatin added. This is the same that you would find in a jar on the shelf at your local grocery. I’ll be making a video on formed / shaped marshmallows very soon which will require gelatin 😊
This is also known as Italian Meringue. Many recipes are called by different names sometimes depending on the regions we are in though the outcomes are the same : )

Is this what you would use to make chocolate covered marshmallow easter eggs?
To make the marshmallow eggs I would add gelatin to keep the structure, set the candy and then cut with cookie cutters 👍🏻
