How to steam milk

  • Machine: DE1 XXL (no prior steam purging required)
    Milk: Fresh milk or whole milk (170ml)
    Milk pitcher: Decent Jug 400ml
    DE1 steam settings: 1.2ml (flow) 150c (steam)
    A good quality of milk texture, will not only affect latte art pouring but also will make the coffee taste sweeter.
    Position,
    First - I would hold my pitcher facing forward, usually be holding it flat bottom, but due to
    this steam wand is lengthy, so I would slant a bit towards myself. to make sure steam tip is pointing right in center.
    Second - Rotate a bit to off center (but not tilt), this way to create swirling/vortex effect.
    Turn on the steam,
    Move down pitcher (around 1-2mm) to create chirping sound for foam (pitcher down for foam), when there's enough foam,
    Move up pitcher (around 1-2mm) to stop aeration then creating a rushing & swirling effect, this to smoothen the milk texture.
    Turn off the steam
    When it reaches desired temperature (55-60c) then turn off the steam,
    without waiting (or ASAP), immediately to pour latte art for best results.
