A Healthier Vegan Frosting

  • Frosting is pretty notorious for being full of sugar, fat, and toxic food colorings. Here’s the healthier version I’ve come up with, which despite lacking traditional ingredients, still tastes pretty darn good!

    RECIPE: "Healthier Vegan Frosting"
    (Recipe makes 1/2-3/4 cup frosting, so double or triple for a larger batch)
    Ingredients:
    ½ cup organic shortening
    ¼ cup Lakanto sweetener
    1 tsp. pure vanilla extract
    ½ tsp. almond extract
    pinch of salt
    STEPS:
    Steps:
    1. First pour your Lakanto or other granulated sugar (xylitol or coconut sugar) into a coffee grinder and pulse for 30 seconds until in a powdered form.
    2. Next measure out 1/4 cup of the powdered Lakanto and pour it in a medium mixing bowl. Followed by the remaining ingredients of 1/2 cup shortening, 1 tsp. vanilla extract, 1/2 tsp. almond extract, and a pinch of salt.
    3. Now stir by hand or you could use a stand mixer, to combine all the ingredients together until smooth. This frosting is thicker than most standard frostings so it may take a few minutes to get it all mixed together.
    4. If you used the Nutiva Superfood Shortening it will be yellow like this, if you like that, great. If not, you could add some color to the frosting. I use these India Tree Decorating Colors.
    5. I add a few drops of the "red" color to make it a pink color, a favorite in our house as you can imagine.
    6. Then it's done. I usually transfer it from the bowl to a container to keep it fresh until I'm ready to use it.
    7. You can then frost your cookies or cupcakes, or any other frosting-worthy treat you would like!

      Real Life Clean Living I had it planned to do one video (frosting & cookies) but I talk too much so I knew it would be too long, so I decided to split them into two videos...unfortunately that meant I had to make 2 videos, instead of one which took longer than I expected. Changed the filming location for this video's intro/exit and I liked it too, kind of a nice change, except I didn't put my mic close enough to me, so I'm going to try and fix that for the next one. Thanks for noticing! ( :

    This sounds like a great recipe for a healthier frosting which I gave up for the most part. I've had reservations about this sweetener, not the monk per say but the additional ingredient in it, the sugar alcohol, erythritol. because of the possible side effects. Studies show it mainly occurs at higher levels which I would guess it's in a smaller amounts in this product. But, some people report effects even in smaller amounts. I'd have to assume you guys do not have any reactions at all otherwise you wouldn't be using it. Have you researched this and what are your thoughts? :)

      ***** Good question, I wondered this too...so far I haven't had any negative side effects from using it, so that's a good thing, but everyone's different. For me, the benefits of not feeling jittery or extra tired after eating it, out weigh the risk for me. ( :

      Hmm. I might give it a try, I see it for sale on Amazon. I'm like you and don't want all that sugar. I use stevia occasionally now but it's just not the same when baking and even stevia caused me some nausea when I was using it too often. And, the monk sweetener by itself without additives is hard to find. :)

    Real butter made with raw unpasteurized milk from grass fed cows is actually a better option than organic "shortening", which is essentially just mechanically processed palm oil loaded with polyunsaturated fatty acids.
