Just a correction, you said the coconut milk was "good fat." The fat was mostly saturated, which is the kind that raises your cholesterol and blood pressure.

If you don't like coconut or bananas, just use vegan milk and/or vegan cream made from either soy, almonds, cashews, oats, rice etc.

Hey friends! This video is getting a bit old- so I wanted to update. Use coconut CREAM rather than milk if you can find it and omit the flour. Also, be sure to stir the ice cream mixture every 45 minutes or sure so it doesn't get too icy and hard to scoop :) Love!

If you don't like coconut or banana, you can make a berry sorbet by just mixing frozen strawberries or rasberries with a little bit of water or almond milk and it's delicous!

To make a heavy cream base that is free of banana or coconut:
    - 400ml of dairy-free milk of your choice. Soy works well because it's naturally creamy. Homemade almond milk would also work well (shop bought is too low in protein). I have used shop-bought rice milk which gives a gorgeous, creamy, slightly sweet taste but is not as nutritious. Another very clean option that is good for digestive health is homemade cannellini bean milk (1 can of rinsed cannellini beans added to a blender, and then use the empty can to add in two cans of fresh water, and then blend until smooth and creamy and, optionally, thin to taste)
    - 100 of unsalted dairy free spread
    - 4 tsp of corn starch
    .
    1. Melt the spread on a low heat and once fully melted, add the corn starch. Stir gently with a balloon whisk until there are no lumps
    2. Once the corn starch and spread are smoothly combined, add the milk and turn up the heat, stirring constantly.
    3. Once the mixture has thickened to the texture of heavy cream (not extra thick or clotted!), pour it into a container and refrigerate (don't freeze yet - or at least if you do you'll have to defrost it again!) overnight.
    .
    To make the ice cream:
Once refrigerated overnight the cream mixture will be sort of like a jelly texture. This can be whipped up on a reasonably low speed with an electric hand whisk until fluffy like whipped cream. It does not have the distinct background taste of banana or coconut. To this you can add your flavouring(s) of choice, and your castor sugar to taste and texture preferences (the more castor sugar added - indeed the more solids added at all so you could add in a dried dairy-free milk alternative at this point too, the softer the ice cream will set)

I make this using vegan protein powder. The powder is pre sweetened and adds the flavor. There’s the added bonus of the grams of protein. I’m not vegan but I started learning how to cook vegan because I have a friend who is and I didn’t want her to miss out on anything when I cook for everyone. I learned about banana based ice cream because of her birthday celebration I did.

Finally tried this, the chocolate had great flavor however this didn't work so well as ice cream as I was not able to stir overnight while it was freezing. I let it freeze in containers until I got a milkshake craving then I thawed under warm water just enough to be able to scoop out in chunks then I threw it in the nutri bullet with about a cup of unsweetened almond milk and a little more coconut sugar and blended til creamy. Wonderful milkshake with less guilt.

smartgirlnyc - next time, try just making popsicles with it. No stir approach. Just hold the molds under hot water longer than for fruit popsicles (20-30 sec works for me) or else you've eating it with a spoon after you lose the stick.

This is the first time I have watched one of your videos. I subscribed to your channel because I enjoyed your personality and the content you shared.
I have made vegan ice cream before with full fat coconut cream. It was a pumpkin vegan ice cream that I made for Thanksgiving.
I only made ice cream for Thanksgiving because that’s what my 7 year old niece said she wanted for dessert when I asked her. 🍨😉

+1CandyGirl Thank you! I hope you enjoy! If you haven't seen my sorbet episode, I recommend making this recipe like the 2nd sorbet I show and continuing to stir it- it will make this creamier and keep it from freezing too hard :) ruclips.net/video/i0gsL5CVFqA/видео.html Cheers! • @SashGirl34
    @SashGirl34 5 лет назад

I am not vegan but I love making this stuff. Like how I freeze coconut milk overnight and take the fat to make whipped cream. Just because it's easier than getting whipping cream and I don't have to go to the store. I can add what I want to it to put in hot chocolate, put on top of ice cream or just need it for a pie/another recipe.

For non-vegans who want something with a lot of protein, here’s my recipe:
    350ml almond milk
    170ml full fat Greek yogurt
    22g cocoa powder
50g sugar sub (I use monk fruit and erythritol blend from Lakanto)
    3g Xanthan/guar gum
    2tbsp of peanut butter (optional)
    Calories: 250-450
    Fat: 7-23
    Carbs: 25-30
    Protein: 23-31
Freeze into ice cubes and then blend it when you want to eat, if you want it firmer, freeze for not long. I would recommend eating this before bed because it’s mainly casein protein. Tastes absolutely amazing and VERY similar to healthy ice cream brands like halo top because it’s almost the same ingredients. Makes a pretty good amount, around 24oz so a bit more than a pint of ice cream.

You can use vegan coffee creamer!!!! I have a book on vegan ice cream and that's what they use. And utilize arrowroot powder to as a way of preventing ice crystals. I've only done it in my ice cream maker. But you could just throw it together and freeze it.

  • @SashGirl34

You can make a yummy non dairy ice cream cake with these. Like making the vanilla and chocolate as an example and putting into cake pans....put crush cookies of your choice in the center. Put the chocolate non dairy ice cream on bottom, the crushed cookies and then vanilla on top...and use vegan frosting if your a vegan....or non dairy frosting if you aren't and just like these recipes. Any extra cookies could be placed on the sides....and you have a beautiful dairy free cake. For a birthday or some special occasions for someone who can't have dairy....Like having a carvel cake if you have chocolate cookies in center. SO YUMMY!!
