I just made these. Instead of only raisins I chopped up gold raisins, dried cranberries and cherries mix. Also, I added pecans. Oh my gosh, my house is scented like Christmas. And I baked the 2 logs, cooled a bit and iced only one. The second log I cooled a few minutes then proceeded like they were biscotti, baked on each cut side 5 minutes. We are at 7,000 ft altitude so I did bake one log 28 mins, the 2nd log 30 mins. The logs did not flatten as much as your photos & I think it is the altitude. I want to THANK YOU for sharing your recipe! Wow! This is our new favorite cookie!!!!

I try to really fluff the flour up when I measure using cups. Hope that helps! Can these be frozen after baking before frosting? I would add the glaze, and cut them after thawing. Edit: I made these as directed and Boy! They are delicious!! The logs baked up nice and big, and made more than 18 cookies. I love the lengthwise cracked look the log gets while baking, perfect for catching the glaze! The glaze was good with vanilla, but I love lemon with gingerbread, so I'm going to try lemon glaze next time. I just cut 1/2 of one baked log to eat right away, and froze the remainder to serve on Thanksgiving. You know how it is - if you don't freeze goodies and hide them, they get eaten in 2 days!

Yes, if you freeze the dough, I would go ahead and shape it into the logs, and when you’re ready to bake, allow the dough logs to sit at room temp for about 30 to 40 minutes before baking. Or you could move the frozen logs to the refrigerator the night before baking. I hope you enjoy this recipe! Thank you!
Add ground cloves to make all 5 pumpkin spices. Or I would double the recipe but put only ginger in it, (none of the rest of the pumpkin spices and no raisins) then press it in a 13x9 pan all the way to the edges. Bake then drizzle the icing on and spread; would make chewy ginger bar cookies!

Can you freeze the dough until your ready to make them?
Yes, if you freeze the dough, I would go ahead and shape it into the logs, and when you’re ready to bake, allow the dough logs to sit at room temp for about 30 to 40 minutes before baking. Or you could move the frozen logs to the refrigerator the night before baking. I hope you enjoy this recipe! Thank you!
Add ground cloves to make all 5 pumpkin spices. Or I would double the recipe but put only ginger in it, (none of the rest of the pumpkin spices and no raisins) then press it in a 13x9 pan all the way to the edges. Bake then drizzle the icing on and spread; would make chewy ginger bar cookies!

Why does the title say the recipe is for bar cookies? These aren’t what I think of as bar cookies.
I cut them into long bars. They’re not individual round hermit cookies, so I think of them more like a bar than a traditional round cookie. I hope you’ll try my recipe! Thanks for watching 🙂
