  • Stracciatella is a dish that takes me back in time when families gathered and enjoyed this simple but delicious dish.
    It is a typical dish of Roman, Marche and Abruzzo cuisine, consisting of an egg-based soup with the addition of grated Parmigiano-Reggiano, salt, pepper, sometimes semolina or breadcrumbs and cooked in broth.
    The name derives from the fact that the egg mixture inside the broth takes the form of small strips.
    Our version has always included egg pasta and strips of meat.
    Try it you will not regret it
    Ingrediants:
    Eggs 4
    Parmesan 100 g
    Egg pasta like grattoni
    Water 3 liters
    Carrots 2
    Celery 1 rib
    Onion 1
    Bay leaf 2 leaves
    Chicken
    Salt to taste
    pepper as needed
    Method:
    Put the chicken, vegetables, water, salt, pepper in a saucepan, bring to the boil and cook for 2 or 3 hours until the water has reduced to about one liter.
    Remove the chicken and carefully separate the meat from the bones and set aside.
    In another pan, filter the broth and bring to the boil again.
    In the meantime, beat the eggs with the Parmesan and pepper, add the mixture to the boiling broth, stirring, also add the pasta and cook for 5 minutes.
    We remove from the stove and add the strips of meat.
    Serve it hot and GOOD APPETITE
