I’m Salvadoran but I try the Haitian food cause my boyfriend is form Haiti and now I can’t leave Haitian food is soooooo good and This now helps me to make my own Haitian food at home Thank youuuuuu!!!
Like Puerto Rican sofrito except we use cilantro onions, peppers, , and garlic. I freeze in ice cube tray and remove sofrito cubes to ziplock bag. I make a batch 2 or 3 times a year! Thank you and greetings from New York City!👍🏼🇵🇷🗽😋
I really like your process compared to the others I've seen. Yours make it so easy for me. I'm Nigerian learning to cook hatian food for my family. Thanks for the tutorial.
I just made my first batch of Epis! It is so delicious. Thank you for this recipe. I love Haitian cuisine so now it’s time to learn to make it for myself. Thank you 🙏🏽
I love love love this recipe. It’s so easy and I love the way it smells when it’s cooking in the oil. My kids come running to the kitchen saying what smells so good. Thanks friend ❤

Thank you 🙏🏻 for this . I just shared it to my story on what’s app so family can see what I’m up to. It’s a blessing to see this video as a Haitian born kid , lol 😂 I’m 27 but u know in the Haitian world adults who are way older than me call me kid those same adults are called gran moun. Some gran moun are nice , some are not , some are petty 😂, some are jealous and sometimes hypocrites as well . I know I got off topic but I’m here to spill my mind and I’m about to cook thanks to Freddie’s amazing video’s. I left Haiti when I was 10 I was never cooking Haitian food and now I am because I see the importance of a great Haitian meal. I just now started cooking and taking my time doing what I do .
I add cilantro and ginger 🫚 to mine too. I also preserve mine with a little rum. I get garlic that I need to peel and comes from Spain, or South America, because most of the pre-peeled and prepackaged garlic comes from China, and they don't practice proper agriculture farming!!
You know i really appreciate you taking the time out to show me how to make this great seasoning for my pork griot, turkeywings and etc and not only that I know you can throw them thank you for your loving❤

Your epis looks like my mom’s epis. Her cousins, neighbors, and friends always buy the stuff and get her to make them some epis lol. It’s soooo good!!! I like this color epis over the green one too
Up here in WAY North NYS we have a store called Save A Lot that sells 10# bags of frozen chicken quarters for about .69 per pound. Pretty sure cooking them up with epis would get them bouncing with flavor. Need to make this.
I cant have anything spicy can i leave the hot peppers 🌶️ out ? I love your channel, you crack me up... I jus watched the rice and beans and im def gonna make it this week..
Haitians esp shouldnt judge amother woman cooking style. The lemon juice or sour orange juice isn't fresh either. You would have convinced me if you said sour oranges and lemon. Ijs. Every household make epis a lil different but all are similar. My mother recipe was slightly diff from my gma. My mom mostly made her epis as she cooked anyway with a pilon n that's what I do mainly. But around Holiday season, I make a batch. N I use either sour orange or just apple cider vinegar as a preservative. Sour oranges is great for piklis as well. Lets give her props cuz baby can cook. ❤
It’s very similar to sofrito just a few differences. They don’t use cilantro they use parsley instead. But it looks like she had parsley and cilantro in this recipe.
sweetie no mojo or maggi or Sazon in Haitian Epis, only fresh ingredients, sour orange juice, vinegar, or lemon juice. No powder stuffs only fresh ingredients. I like mine too with color so I add more red peppers... apart from that not bad :)
Sweetie no mojo or Sazon in YOUR HAITIAN EPIS recipe. If I make MINE a certain way than that’s the way I like it. If you have your own recipe than you can continue to follow it.....apart from that thank you for watching. 🙂
I wanna make this. I cook a lot of Jamaican food and we use green seasoning. So I can use Epis the same way I use green seasoning or no? Like what can I use it with?
Speak on your sink sis. Mine gets washed with bleach and hot water after every use and it gets washed with hot water and bleach b4 I make my epis. So your sink is the one filled with bacteria not mine.
She said, “ I like to get the peeled garlic...cause I ain‘ t got time to be doin all that!“. Love it!!

I liked the video as soon as you said you had the garlic that was already peeled lol
Girl yessss! Ain’t nobody got time to be peeling garlic all day lol 😂
@Vanessa Louis she ain't lying. Peeling garlic is WORK!😅🤣
I said the sammmmmmee thing!!!! Lol 😂
I peel a pound of garlic by hand but, I like doing it. Reminds me of mom and helping/ learning from her!😃
I do it like that lol..here in Oregon we eat well, we find many unpeeled garlics
I add cilantro and ginger 🫚 to mine too. I also preserve mine with a little rum. I get garlic that I need to peel and comes from Spain, or South America, because most of the pre-peeled and prepackaged garlic comes from China, and they don't practice proper agriculture farming!!
I was going to say I'm adding cilantro and that ginger sounds amazing too.
How long does yours last with the rum.

Fresh parsley is kind of touch and go to find as well as any hot peppers, but I'm pretty on-point with rehydration techniques.
Merveilleux!

Crazy how our recipes are very much alike even tho I’m following my aunt recipe.
Thank you so much for this the only thing different my mom did was add MSG LOL I know ppl don’t come for my mom lol

I use MSG too, it wakes up the flavor in your foods.

Thanks for sharing. There’s actually more flavor it in the system of the parsley then leave some cells.
Then, when you’re making yours, you can also use the stem and not only the leaves. Thank you for sharing.
Hi 😊I put too much leek in my epis, how do I fix the strong bitter taste?
Good information almost 6 months good 👍 Miami Florida 🌴
HOLY $#!t!!@ I could literally serve this as a soup.🤣

If you crush the garlic with the side of your knife your garlic pops out the of skin easily.
I know but it’s still easier buying it already peeled lol
@@cookingwithfreddieI hate peeling garlic 🧄😩
@ me too 😩
I made this and it was amazing. Should I freeze the rest or keep it in the fridge?
U can keep it in the fridge
Where do I get mojo marinade? Is the Puerto Rican thing? The Cuban thing?
You can find it in a Caribbean store, Walmart, Publix.
I love it
Why do you like the hard maggi as opposed to the soft crumbling one?
It taste different to me I just don’t like it
I did my batch base off of your recipe with a lil twist. Thank u ma’am 🙂
It’s very similar to sofrito just a few differences. They don’t use cilantro they use parsley instead. But it looks like she had parsley and cilantro in this recipe.
is it okay to sub green onion with yellow?
Is the sauce spicy ? And do we have to use the peppers ? Because we don’t like spicy
@@Thegirlelle no its not spicy
Would it taste bad if you put the parsley stems in the blender too?
No, it will not taste bad yo can add them if you want to.
How would you describe the flavor of the Epis to someone, as myself that has never tried Haitian food. I love spice and was curious
Fresh, garlicky, well seasoned idk how else lol
Do you have to use the hot pepper my kids do not like spicy food
It’s not spicy but no you don’t have to add them
Couldn't find mojo marinade, is it okay if I leave it out??
Yes you can leave it out
Thank you, I was gonna ask the same question! Lol
Not needed because you are making a marinade!
Is it okay if I added a little bit of water on it ?
I would not suggest water use oil
it's like sofrito
Yess just like it

Hi I tried making it and it was bitter , any tricks to fixing it ?
Sometimes when u let it sit like the next day it may not be bitter anymore. But if not its probably something you added that was not good.

Epis is supposed to be green. If you want it a little red just throw in some tiny cherry tomatoes (not a lot) . I love epis green.
Where is it written that epis should be green? Good for you for liking your epis green hon however this ain’t your epis 🤷🏽♀️
