These look amazing, and I love bacon.(Who doesn't?) But when I cook scallops, I want the subtle sweet and briny flavor of the delicate scallops to be the star of the show. The bacon with it's salty, fatty goodness steals the thunder and drowns out the texture and flavor of the scallops.

WHY...WHY would anyone want to wrap BACON around the most delicate flavor of the sea...Scallops...if you're going to wrap a cured and smoked bacon strip around scallop..you could get the same 'flavor' to your taste buds with a medallion of Cod. It would look the same...and yes, you would get the bacon flavor...lt is same as if you just ate bacon and eggs...to put a piece of cured pork around a glorious and subtle flavor stand alone Scallop...is just sacrilege! Why BOTHER with eating a scallop in the same mouthful? Why bother? YOU CAN"T TASTE IT.....all you taste is bacon with some butter....
