- Kate Moore is on hand once again to show us the best way to make easy homemade fudge. Simple and sweet, you can mix in your favourite flavours to this classic vanilla fudge recipe and make edible gifts for friends and family.
her: "...the fudge will keep up to 6 months in a storage container..."
me, watching my kids' stare and drooling from the corners of my eyes: "no, it won't."
@Tranquilized Horsefly I don't know if you're in urgent need of sleep, coffee, a walk in the park or a hug; but whatever it is: I hope that you'll get it soon. Have a lovely day.
Maybe and only if the fudge would multiple like bunnies on afrodisiacz and Viagra it would have a chance of survival, but I'd put all my bets on extinction within those 6 months.
My mum said exactly the same thing!🤣
I made it yesterday and already half gone
I just made & it came out perfect...small tip add a little (1/2 Teaspoon) of Salt to bring out the flavor...no need for a beater 3 mins after taking it off the heat use a wooden spoon & mix thoroughly until it starts to get grainy...good recipe & good luck ppl
Made this a few times now. What she forgets to include is that you should boil the mixture at a medium-high temperature for around 1-2 mins only and then immediately bring the temp down to medium-low, and then cook for a further 20 minutes, gradually reducing the heat down to low. If you leave the temperature on high for 20 mins then you're just going to burn the whole thing.
I make this fudge several times a year for birthdays and at Christmas. My first few tries were not the best but I got myself a good heavy based pan and a thermometer and now it works every time. It does take about 20 minutes to get to temp, if you go too fast to get to 116C there will be too much moisture left in the mixture and it will set soft, if you boil it to temp too slowly there will not be enough moisture left at it will set hard and crumbly or go grainy. Once everything has melted and dissolved and it then starts to boil then start your 20 minutes boiling time stirring carefully all the time. I find it takes any where from 20-30 minutes. Then I put the pan on my granite chopping board to cool for 5 minutes before beating with the mixer. The mixer time can take around 5-8 minutes depending on your mixer speed. Works for me now every time. Good luck.
This recipe saved my life! I can't go out and buy my friend the birthday gift she wanted so I bought her something and and made her this fudge ✨😁
Do not follow this down to the t, especially when boiling the fudge for 20 minutes, your heat may not be the same as her heat. Just mix until it becomes thick or else you will end up burnt sugar and an extremely hard mixture which doesn't resemble or taste slightly like fudge. This happened to me first time round.
MrMike d
Just use a thermometer and bring to 116C and it works fine and does usually take the 20-25 minutes she says in the video. I make it a few times a year for birthdays and Christmas and it works every time with a thermometer.
Use a heavy based pan which will help prevent uneven cooking of the mixture.
i made this tesco fudge followed the vid. result a sticky cream that did not set when cooled . 150.grams butter 1 tin 410 grams evap milk . 500 grms of caster sugar had it low till butter and milk and sugar was well melted. did the water test made a ball left it for 5 mins after boiling point i never had an electric whisk so used a hand whisk and elbow grease stuck it in my buttered tin. result was a cream that tastes like tablet but looks like cream. total fail. but will try again and buy an electric hand whisk. trying to make it for my grand kids. i made tablet wjth 1 bag caster sugar and it worked a treat but not a tesco recipe

Best to just buy a sugar thermometer and take the guess work out of it. They're like £5 from Amazon and come in useful for anything from making perfect home make chips, to making cinder toffee, fudge , boiled sweets and all sorts.
In the last few weeks I've watched 50 plus videos on baking & making food from chicken dishes to buns to croissants but when I watched this video on fudge I immediately wanted to make them so after watching it another 3 times I felt I was ready to make them.
I made them before work and left them to cool, that work shift was the longest ever and as soon as I got home I had the most delicious fudge I've ever tasted.
So if you go to make these start your heat hotter at the start and after 10 minutes turn down to medium high, my back got sore after 25 minutes stirring and at 35 they were done. Trying to get the fudge in the water to form a ball meant stirring slowed so some flaky bits appeared but I carried on and when I used the hand whisk these disappeared. Be careful putting it into the tray as the fudge is still really hot, and don't worry about cleaning the pots they magically become clean!
I used this recipe and flavoured with Bailey's made the most amazing fudge!
Hi Lisa, that sounds delicious! We're glad to hear you enjoyed it.
Tesco
Lisa, when did you add the baileys to it. Did you add it before boiling or after when you add the vanilla?
Great idea!
I make this fudge and I have been for about two or three years. There’s something different I always do though.
Here’s some tips.
Cool your fudge till it stops bubbling before mixing
If it seems like it won’t come together and is still thick, put some icing sugar in then heat the mixture up until it starts to bubble a little.
After that, take it off the heat and beat it instantly, then after 1 minute of beating pour some icing sugar in. Pour more and more till you get that gritty part in the video. (Don’t pour too much at a time as it could make the fudge too grainy even if you don’t notice it)
Those are my tips. Hope it helps c;
I didnt do this and it wasnt gritty at all and it still worked
@@josipprnjak1077 That's great, I guess your lucky.
She did say, "IF it seems it won't come together..." And like someone else said, everyone's heat is different (pan/hob) so you can never follow a recipe 100% to the letter; sometimes you have to improvise and find your own way. X
This tastes amazing!! Im just 11 and this is the easiest and most simplest fudge i made! I finally knew how to find the softball stage.

Spixio Studios I made it as well I’m 13 your 14 :D
This lady is so good at this. Please make more videos with her!
Dude, fudge is NOT supposed to be made like that, its supposed to be crumbly not solid
I know her daughter we were on a cooking show together 😂☺️ her mum also came to our school she is super nice
Jennifer Ndukuba ,lol

@@VypaGaming - I have just tried the recipe she did (and failed) and not even 20 mins ago. I did it to the letter, and it ended up so crumbly and almost solid chunks, I could have used it as a foundation base for my house. :(
@@WhosAGoodDogue, did you let it cool before mixing? You need to let it cool to quite bit. To 45 degree celcius or 110 fahrenheit.
Guys 1 thing i think i should say is when your whisking it to get the texture is it takes longer than i expected it would, really good for myself and my family everyone enjoyed it, thanks
Ingredients
410 grams of evaporated milk
500 grams of caster sugar
150 grams of butter
You forgot the vanilla extract
You don’t need that.
DON’T TRIP but its “vanilla” fudge so it is needed, but you could flavour it with anything sweet to be fair
Thanks
Big Budz Gaming it taste good even if you don’t flavour it.
Thank you for such a useful and amazing recipe I can now say I have made the best fudge thanks to this thank you
Works for me👍 after about 8-10 you start to notice it thickens a bit and I just keep adjusting the heat while stirring, as it first boils reduce heat to simmer for a couple mins otherwise it will boil over then just keep it at a medium heat for the remaining time and keep stirring slowly the whole time
I followed this recipe word for word-and it turned out beautifully! Near the end of the boiling stage, despite stirring like a maniac dark flakes appeared (burning) - but like magic by the end of the boil they had completely disappeared. The texture, flavour and colour was better than that which is bought in a sweet shop!
Add the vanilla extract to your mix on the boil, reduction will intensify the favour, also a handful of whit chocolate at the end will help if solidify and adds a creamy flavour to it, you’ll have to reduce the butter by 1/4 if adding white chocolate, the choc goes in when mix is cooked down too
Fab! It's so easy to make now we (kids and me) are waiting for the outcome 💁🏼👬👫
I can't thank you enough for sharing this! I live in Honduras and I can't get fudge anywhere. They just have dulce de lech which is similar, but just not as creamy
This looks easy and simple and very delicious I’m definitely going to Tesco’s tomorrow ☺️☺️☺️Thanks
Thanks so much Tesco...made this for the first time ..Success! xx
u made it easier and looks it appears to be so good, and you look so pretty and relaxed, with love from Walvis Bay
I love it 😻 👌🏻👌🏻😋😋😋😋😋 ..evn I made it was to yummmm everyone loved it..!
Just made this did take a little extra time but has come out like the lady's in the video
Would recommend 😋
thank you i think it will. i don't think i boiled it long enough and let the temp get high enough.
Quality of the video - is perfect! Thank you for the recipe!
followed the recipe n video and ended up with the best fudge ever thankyou xx
EDIT: _The clean-up went easier than anticipated. Filled the pan with boiling water, threw in the spoon and beaters and let all the solidified sugary mess dissolve._
Well, _that_ was a disaster. I followed everything to the letter. Here's what I did, and perhaps someone can help say what went wrong (apart from deciding to try this 'recipe' in the first place! lol!)
1 tin of TESCO 410g Evaporated Milk
500g TESCO Caster Sugar
150g of _Graham's_ Unsalted Butter
----------------------------
1) Cubed the butter, and emptied the evaporated milk into the pan then tipped in the Caster sugar.
2) Brought up to a medium heat and got everything nice and melted.
3) Brought to the boil, and stirred CONSTANTLY for approx *15 mins* (wrist aching at this point and mixture getting hard to stir).
_....the colour was almost a dark brown at this stage._
4) not even 30 seconds later, in the pan it was VERY difficult to stir
5) Dropped a bit of the mix into a glass of cold water - and IT WENT SOLID ON CONTACT - actually like a hard toffee.
_I did not include any Vanilla extract/essence_
6) Brought out the food mixer, and with the beaters mixed it for not even 15 seconds.
_....It went _*_solid_*_ on the beaters._
7) Trying to remove the ''fudge mix'' from the pan was almost impossible as it was very dry and crumbly. It has now set, but it's _solid._ - as in inedible.
So...erm...what gives?
I have a ceramic hob electric cooker, I CAN cook (though I am no Ramsay or Oliver, but I've nnot starved yet), and know what a medium heat is on my appliance, and what a rolling boil is.
I used a thick based stainless steel pan, and a wooden spoon through-out.
I will not be trying this again, as the clean up on the pan is going to be a nightmare. (It's NOT burnt or stuck to the bottom). Just all dry and solidified brown crystals.
:(
You cooked for too long, your mixture went to the hard ball stage.
Thank you so much my wife is so happy she can make fudge now. x
Many thanks! It's really nice recipe! Would to try it next days!
Hello hello
First of all thank you for your clear and beautiful pronunciation, it was easy to understand for me as a Dutchy.
Can you please explain why I have to mix the fudge at the ens with an electric mixer till grainy? Doesnt it need to be soft and fudgy? I was a bit surprised... 😃 A great video by the way.
I finally did it and it taste amazing
+Zoe Davies We're thrilled you enjoyed it Zoe! Will you be cooking this for Christmas treats too?
Works so well
Absolutely mouth watering
I tried it,it came out perfect!!! Thank you!
For what? Friends and family that.. amount looks only for me.. 😂😂 lol
My mouth was watering while watching this. The fudge looks so good! >.
yummm best fudge ever...love it
this fudge is amazing i would recommend it to everyone. it tastes almost like the real thing
real thing ? it IS fudge lol
Thank you for this recipe this was very simple to follow but took me more than 20 mins of boiling :/ but the results were very amazing my colour was darker than yours anyways this was a simple fudge video and i also doubled up the ingredients Bcz i made it in a bigger tin/baking tray:)
How long did it take?
Is evaporated milk the same as condensed???
ii Reee condensed is sweeter that’s all
@@heidisibbald7484 Thanks! 😀
No they are not the same. Condensed milk is a lot thicker.
This is the best vid I saw of how to make fudge. 💜
Great to hear!
Glad you enjoyed! - Andy 😀
Now i know where I'm going wrong! I used to collect Disney cakes and sweets and followed their recipe which is exactly the same as his (apart from the vanilla theirs is 1tsp) and it would always stay runny and never thicken! I'm going to leave it boil until it thickens now :)
Thanks I'm gonna try this sometime :)
I love fudge and caramel 😍😍😍😍😍😍😍😍
This recipe is very dragging, instead for bubbling for 20 mins mine took 45 minutes to get thick. I was about to give up. But at last minute it worked. You just need patience. But it's a nice recipe
#LoveTesco
Same mine took around one hour but still worked
In Germany you can't buy fudge all the time 😓 Today i've made this fudge : i thank you so much , it's delicious 😍
Hi I have a question @tesco : I dont have a hand held mixer so when it's done can I just transfer it to a bowl and mix using a kitchen aid instead? Or will that affect the heat of it or something?
That's fine
I used cornish clotted cream, golden syrup and salt flakes in mine
I will try it out
made this ... nice ty
everything used could i get at Tesco?
PartyBug98 Obvsly
just asking to make shore
thank you!
PartyBug98 *sure. :)
Thanks.
Have a nice day.
Bye.
This tastes incredible!!!!! One issue though... My fudge set but stated quite soft rather than firm ... Any ideas why @tesco
+Leanne Phoenixbeautyy It may be because it needed to cook for a little longer, reaching a higher temperature. It should be bubbling away for about 20 minutes and at this stage you could use a sugar thermometer and it should reach about 115 degrees.
Me and my Gran made fudge with this recipe and my grandad loved it. He requested next time we add almonds
So glad your grandad loved the recipe. Adding almonds sounds like a delicious idea! 👌
dame da ne dame yo dame no yo vs xue hua piao piao bei feng xiao xiao tian di yi pian cang mang. fudge is yummy
It looks perfect!!!!
I am sooooooooooooooo ready to make this
Could you make some more fudge videos. Some different flavours maybe using real fruits like raspberries for an Eton mess fudge, lemons for a lemon meringue fudge or banana for a banoffee fudge? Could this fudge be adapted for these?
Love it
Evaporated milk and not condensed? Is there a big taste difference?
the first time I made this it was perfect my family keep asking me when I'm making more but since the first time some times it tastes like fudge but sometimes it tastes like tablet, where am I going wrong when it tastes like tablet? when it tastes like tablet I don't get any cause I don't like tablet but I love fudge, can anyone help me figure out what I'm doing wrong?
+kerensac Hi, we're very sorry to hear this! It may taste more like tablet if you have cooked it for longer than is needed. If you'd like to try another option there is our salted caramel fudge recipe - realfood.tesco.com/recipes/salted-caramel-fudge.html.
looks yum
Looks yum! I followed the recipe but it wouldn't set. I stirred it for 45 mins but it was like water. I just gave up and poured it into the tin :( Still waiting to how it comes out!
any update?
it looks awesome
Nice looks really good
Delicious
Thank you
So good!
Just done some fudge ended up with black burnt bits in it :( also like a few other said it didn't set for ages and still don't think it was perfect but we shall see it's now in my tin cooling , does look lovely just hope it doesn't taste burnt :) evaporated milk in tescos guys 55p x
+Kayly Parker If you are having issues with the fudge setting it may help to consult the recipe in full - realfood.tesco.com/videos-and-tips/how-to-make-fudge.html. In regards to the burnt bits, you may need to try having it on a lower heat for longer and constantly stirring the mixture. We hope it turns out okay!
it looks soo good😍😍😍😍
So glad you think so! Will you be trying this at home for yourself sometime? 😊
Hi, will homemade condensed mil work as well thanks x
Liberty Pitt Vc
Condensed milk isn’t the same as evaporated milk. There’s other fudge recipes out there that work well with condensed milk though.
really great
i dont have an electric mixture. will i be able to whisk it by hand instead?
Would unevaporated milk (just normal milk) work? What is the difference?
i havent got evaporated milk but i have got condensed milk will it work the same?
Hi! If I didn't want the fudge to be "too" sweet, can I halve the sugar content and still get that consistency? If no, do you have any suggestions on what to add so I can still use half the amount of sugar but still be that fudgey?
+TheVittoria2412 Hi, You could try halving the sugar, the consistency may change a little but it should be okay still. Or you can try using unsweetened condensed milk instead of evaporated milk to make it a little less sweet. Thanks.
@@tesco hello what kind of butter should I use salted or can I use margarine
@@legendgodmyth salted. The vast amount of oils in margarine will change consistency/give nasty taste imo
Can you use condensed milk in this recipe instead of evaporated milk and if so would it be the same amount?
This is better with evaporated milk. If you want to do a condensed milk one search for look on the Carnation channel as they do one.
Can I substitute some of the sugar with invert sugar?
I want to try this so bad
Can we use sweetened condensed milk instead of evaporated milk and caster sugar? If yes, then how much is required
Neha Jain erm I use 397g condensed milk, 150ml milk, 115g butter and 450g Demerara sugar
Real fudge needs sugar.
Is that evaporated milk with or without sugar?
I'm actually eating tescos fudge whilst watching this
I made a similar recipe last christmas, two batches, first batch was way too soft, even though I used a candy thermometer? Second batch was better but I didn’t beat it before transferring to the tin. How important is beating it? Is there a scientific reason that affects the results?
how much chocolate do I put in and do I still add vanilla extract
I'm From America and I'm Used To Measuring Things Out In Cups Anyway I Could Find The Recipe In That Specific Measurement
尼族 Love go online and find a grams to cups converter. Best getting some scales though, they’re not that expensive and more accurate than cups.
What type of evaporated milk do you use as I have seen 5 different types on the shelf from sweet and thick to watery and low fat?
+Dillon Frost We would recommend something like this - www.tesco.com/groceries/product/details/?id=256909870
Do u need to add vanilla extract??
Could I add melted chocolate and mint extract to make mint chocolate fudge?
So tasty Recipe lik
can this be made into chocolate fudge by adding melted chocolate or cocoa at some point? If so, when would I add it and how much? - Thanks
+Nifer B We have a recipe for a white chocolate and cranberry fudge that will hopefully suit what you are looking for - realfood.tesco.com/recipes/white-chocolate-and-cranberry-fudge.html.
Can I do it with sweetened condensed milk and not add sugar? Its not easy to find evaporated milk in my country.. Thanks in advance
No, fudge needs sugar. If you use condensed milk just thin it down with some normal whole milk.
yum
Oh Dear,,, I have a very dark brown brick ready to throw in the bin.. HELP. What did i do wrong?. Did it all like you did,, only i think my saucepan wasn't think bottomed enough. I'm gonna try once more with my pressure cooker saucepan. Hopefully that will work.. 🤞
I've done this but mine doesnt go thick!
A nice, easy recipe, but I don't make "gritty" fudge, mine is smooth. I add homemade marshmallow creme & baking chocolate.
how to make peanut butter fudge?..can u jst add peanut butter or what
you put peanut butter and butter , you melt them together then you add the sugar, there's no milk
Fantastisch!
mine hasent gone gritty just stays a liquid
You're going to want a electric whisk to thicken it up.
just but a thermometer so cheap and foolproof
Salted or unsalted butter?
Up to you.
Looks really good. Could you just add condensed milk or not???
no
Ok thanks. sine i watched this video a while ago, i found out the answer. yet again thank you! abigail swain
Can i substitute the evaporated milk with full cream reg. milk ??
