- Brussels sprouts, shredded kale and almond salad
Ingredients:
- 6 shallots, thinly sliced
- 100g (about 3.5 oz) flaked almonds
- 6 tbsp (3 fl oz) olive oil
- 500g (about 1.1 lbs) Brussels sprouts, sliced very thin
- ½ bunch kale, finely sliced
- 2 tbsp miso
- juice of 1 lemon
- salt, to taste
Method:
1. In a large frying pan over medium heat, toast the almonds. Once toasted, remove them from the pan and set aside.
2. In the same pan, add 2 tablespoons of olive oil and sauté the shallots with a pinch of salt until they are soft and fragrant and have some colour.
3. Place the thinly sliced Brussels sprouts and kale in ice water to wash well, then drain thoroughly.
4. To make the dressing, combine 4 tablespoons of olive oil, miso, lemon juice, and a pinch of salt in a jar. Shake well to blend the ingredients.
5. In a large bowl, add the drained Brussels sprouts, kale, half of the almonds, half of the shallots, and the dressing. Toss everything together until well mixed.
6. Serve the salad and garnish with the remaining almonds and shallots.

I took out a chunk of the bone in my thumb on one of those, and my then boss was like "nah that's not bone" and stuck a plaster to it, which started to fuse and I almost fainted taking it off 😭 still can't look at one without cringing
The mandolin probably causes more injuries from a blade annually than stabbings 😂

I have a kevlar glove I ordered with my mandolin. Saved my ass once. Never use a mandolin without a glove or the guard. Don't care how uncool it looks.
As a mandolin survivor, I approve this message... 😂😂😂 Legit shortened a finger.... And have never used the death trap since. Just haven't had the nerve.
I'm missing part of a thumb thanks to one of these things. Those blades are no joke. Kevlar is 100% the best bet against an emergency room trip.

I was literally cringing at the mandolin part because I sliced my thumb in half one time, and then Andy cut himself and I felt that. 😂
Same… Well, not the same injury, it was actually my husband who sliced off the tip of his finger pad, but as someone who doesn’t do well with blood, it may have been just as traumatic for me as it was for him 😂

Never thought that someone ate Grünkohl (Kale) and Rosenkohl (Brussels Sprout) outside from Germany, espacily because Kale is a classic dish in winter after the "first frost". In northern Germany there is the dish called "Grünkohl mit Pinkel" where Pinkel is a smoked, coarse-grained grits sausage. Often it is also served with pork (Kassler und Bauchspeck). Brussels Sprout is also a Wintervegetable and served in the wintermonths...

I love Brussel sprouts. Kale, however, can go straight into the compost. College dorm mate a long time ago made me a "Kale salad that will make you like kale for once." They were very wrong.

Try Tuscan kale, I hate regular kale and tried Tuscan kale which is way more tender, love it.

Heads up as well, brussel spouts got their bad reputation years ago and since then they've been bred to taste a lot better, so give them another go if you haven't since you werr a kid

Kale is very common over here in the Netherlands but almost always cooked, mashed with potatoes and topped with crunchy bacon. To give it extra flavour though I put in some raw kale.

Brussell sprouts have childhood trauma for me. Back in the day, like 45 yrs ago, mum would cook Brussell sprouts in the microwave. I dry reached EVERY TIME I was forced to eat them! These lips will never touch a Brussell sprout again! 🤢🤮

Brussel sprouts, olive oil, balsamic vinegar, garlic cloves, bacon bits. Trim and cut sprouts in half. Toss everything in a lil oil, drizzle vinegar on top. roast at 350 until it looks good. Add more vinegar/balsamic gaze. Best shit ever bro.
OMG Kale's texture is like chewing house siding. I love Brussels, and attempted this recipe hoping they would improve the disaster that Kale is, and no go… I just wasted some great Brussels sprouts by mixing them with kale. I redid this recipe using Swiss Chard, and added cranberries and it was lovely.

When people say they don’t like something, I instantly don’t believe them because an ingredient can be cooked or prepared hundreds of different ways. I use to despise spinach until I tried it lightly fried with chilli and garlic 😍 now I’ll eat the stuff raw. Though I hate it over cooked, just like steak or Brussels sprouts.
I can't believe 15 years ago I used to take hot yoga on Sunday morning then go to the local farmers market where I bought kale, carrots, tomatoes etc...then went home and meal prepped them (before meal prep was even a thing) for the entire week to take in salads for my lunch. I even made my own dressing (thousand Island from the Skinny Bitch cookbook. You could eat it with a spoon.)
Now I can barely get out of bed, not because of my diet but because I basically let life take me down. I wish I hadn't done that.
